- 3. Fermented Drinks • What is brewing? • What is distillation? • What is stilling?
- 4. • The alcoholic level of all fermented drink is normally between 4 to 14%. • The alcohol level in fermented drink rises up to 14%. • Once the alcohol level reaches 14% the yeast is killed later it brings the fermentation process to a halt (or) end.
- 7. What is stilling? • Stilling is a process of separating alcohol from water.

- 13. BREWED & FERMENTED DRINKS • It is similar to fortified drinks but the difference is while it is usually malted & crushed cereals, it • is brewed in hot water to get maximum soluble sugar from the malt, and its then cooled and • allowed to ferment with the addition of yeast
- 14. Beer • Beer is brewed and fermented drink. Most beer are made from barley malt. • Ground up malt is added to hot water to make them get easily mashed. • This process is called as ‘mashing’. • The alcohol content in deer is between 4 to 10%
- 15. • Lager: bottom fermented beer Lagers are probably the most common type of beer consumed. • "Lagern" (to store) Lagers are bottom-fermented, where the yeast culture ferments at the bottom of the fermenting vessel (or) tank. • They were traditionally stored at a low temperature for weeks. • The alcohol content of lager beer is 3–6% • Ale beer: Top-fermented beers. Top-fermented beers tend to be more flavorsome. • The beer have strong hop flavor including a variety of grain flavors and fermentation flavors. • The alcohol content of lager beer is 4–7%

Liqueur • Both spirit and liquor refer to any unsweetened distilled alcoholic beverage: vodka, gin, brandy, whiskey, tequila, and the like. • A liqueur is a sweet or herbal alcoholic drink that is made from fruit, herbs, flowers, nuts or spices plus (usually) sugar and a spirit such as grain alcohol, vodka or rum.
- 20. • Example: • Aurum is a sweet Italian liqueur. • It is 40% alcohol by volume and it is made from brandy and citrus fruit infusion. • Tia Maria is a dark liqueur made originally in Jamaica using Jamaican coffee beans. • The main flavour ingredients are coffee beans, Jamaican rum, vanilla, and sugar, blended to an alcoholic content of 26.5%.

Eau de Vie • Eau de Vie is a French expression meaning “water of life”. • Eau de Vie is brandy made by crushing and fermenting fruit, then distilling that fermented fruit mash. • It is generally colourless. Alcohol content 40%. • Eau de vie is served as a digestive, to aid in digestion at the end of the meal.

- Fermentation bacteria are anaerobic, but use organic molecules as their final electron acceptor to produce fermentation end-products. Streptococcus, Lactobacillus, and Bacillus, for example, produce lactic acid, while Escherichia and Salmonella produce ethanol, lactic acid, succinic acid, acetic acid, CO2, and H2.
- Still wines – Table wine or Dinner wine -do not contain CO2. -CO produced during fermentation are allowed to escape.
- Red wine – served at room temp. White and Pink wine – served chilled.
- Sparkling wine contains carbon dioxide. Sparkling wine are served chilled. Fortified wine are still wine to which brandy is added. This process increases the alcohol strength.
- The addition of sugar or extra fruit before a second fermentation increases the alcoholic content of the resulting beverage.

- Brandy: it is a spirit distilled from grapes (wine). It is stored between 15-18’C. Gin: it is a spirit distilled from cereals and flavored with flavouring agents like juniper berries, orange peel, lime, coriander seeds(dhaniya). Whisky: it is a spirit distilled from fermented barley, corn during fermentation the drink gets its amber colour.
- Tequila: It is a spirit distilled from the fermented juice of Agave Tequilana Weber. Rum: it is a spirit distilled from molasses or sugarcane juice. (Molasses - which is a by-product of sugarcane) Vodka: it is a spirit distilled from barley, corn, ray, potatoes. It is a clear drink which is taste less odder less

- Like other lacto-fermented drinks, kvass is more hydrating than even water. In order to remain hydrated, our bodies require a balance of electrolytes. Cultured beverages like kvass help restore this balance without the sugar and preservatives of modern “sport drinks”. In fact, beets are high in betacyanin which can dramatically increase the oxygen-carrying ability of the blood.
