13. BREWED & FERMENTED DRINKS
• It is similar to fortified drinks but the difference is while it is usually

14. Beer
• Beer is brewed and fermented drink. Most beer are made from barley
malt.
• Ground up malt is added to hot water to make them get easily

of beer consumed.

herbs, flowers, nuts or spices plus (usually) sugar and a spirit such as
grain alcohol, vodka or rum.

• Aurum is a sweet Italian liqueur.
• It is 40% alcohol by volume and it is made from brandy and citrus fruit
infusion.
• Tia Maria is a dark liqueur made originally in Jamaica using Jamaican
coffee beans.
• The main flavour ingredients are coffee beans, Jamaican rum, vanilla, and
sugar, blended to an alcoholic content of 26.5%.
21. Eau de Vie
• Eau de Vie is a French expression meaning “water of
life”.
• Eau de Vie is brandy made by crushing and
fermenting fruit, then distilling that fermented fruit
mash.
• It is generally colourless. Alcohol content 40%.
• Eau de vie is served as a digestive, to aid in digestion
at the end of the meal.

Fermentation bacteria are anaerobic, but use organic molecules as their final electron acceptor to produce fermentation end-products. Streptococcus, Lactobacillus, and Bacillus, for example, produce lactic acid, while Escherichia and Salmonella produce ethanol, lactic acid, succinic acid, acetic acid, CO2, and H2.
Still wines – Table wine or Dinner wine

-CO produced during fermentation are allowed to escape.
Red wine – served at room temp.
White and Pink wine – served chilled.
Sparkling wine contains carbon dioxide.

Fortified wine are still wine to which brandy is added.
This process increases the alcohol strength.
