The Akanes Lailia, dating back to 1700’s is made by
confectioners of Serres with great zeal and quality
ingredients, always according to the traditional way. It's a
sweet delight of excellent taste and quality, known
throughout Greece and abroad.
18. AKANES RECIPE
Ingredients:
1 glass of goat butter;
1 glass of corn flour;
2 glasses of sugar;
1 cup of chopped almonds;
2 ½ glasses of water;
1 tablespoon of lemon juice
Method:
0 We put the almonds in boiled water for 10 minutes, we leave them to dry and then we
chop them.
0 We roast the almonds with 3 tablespoons of butter. We put the remaining butter,
sugar, two cups of water into saucepan and boil them.
0 In the meantime, we dissolve the corn flour with the half glass of water well.
0 As soon as the mixture in the saucepan is ready, we take it out of the stove we add the
corn flour, the almonds, the lemon juice and stir until it thickens well.
0 We leave the mixture to cool and we make little balls. When all is finished, we pour
icing sugar.

μεγέθυνση εικόνας Ρύζι καρολίνα Σερρών ΑΡΟΣΙΣ Το ρύζι καρολίνα Σερρών ΑΡΟΣΙΣ καλλιεργείται κατά μήκος του ποταμού Στρυμόνα. Οι ορυζώνες είναι προσήλιοι και συνήθως πλημμυρισμένοι με νερό. Το άρωμα και τα φυσικά συστατικά του «κλείνονται» μέσα στη πρωτότυπη συσκευασία. Παραμένει σπυρωτό και δε λαπαδιάζει κατά το μαγείρεμα. Χρησιμοποιείται κυρίως για ριζότο, γεμιστά, σαλάτες. Είναι φυσικό τρόφιμο υψηλής διατροφικής αξίας. Η απουσία λίπους, χοληστερόλης και αλάτων το καθιστά ιδανική - υγιεινή τροφή, ακόμη και για άτομα με ειδικές διατροφικές ανάγκες (χορτοφάγοι). Το ρύζι αποτελεί κύριο συστατικό της Μεσογειακής Διατροφής. Συσκευασία 500γρ.
Γενικά : Ο ακανές είναι το κατ' εξοχήν παραδοσιακό γλυκό των Σερρών. Δεν θα το βρείτε σε καμιά άλλη περιοχή, τόσο της χώρας όσο και της υφηλίου. Οπτικά μοιάζει με ένα μικρό λουκούμι. Γευστικά όμως είναι η διαφορά. Αυτό που καταλαβαίνεις από την πρώτη στιγμή είναι η γεύση του φρέσκου βουτύρου και το καλοψημένο αμύγδαλο.Ο ακανές Λαϊλιά Σερρών είναι το γλυκό που σίγουρα θα πάρετε μαζί σας πριν φύγετε από την πόλη μας. Ιστορικά στοιχεία :Η ιστορία του ακανέ στις Σέρρες ξεκινά επί Τουρκοκρατίας, όταν οι Μπέηδες έκαναν τις καλοκαιρινές διακοπές τους στο Λαϊλιά Σερρών.Η παρασκευή του γινόταν με τις τεχνικές της εποχής: μέσα σε μεγάλα καζάνια έβραζαν ρετσέλια και πετιμέζια με νερό από την πηγή του Λαϊλιά. Γι' αυτό μάλιστα έμεινε και η ονομασία " Ακανές Λαϊλιά Σερρών ". Λέγεται ότι το νερό του Λαϊλιά, καθότι ήταν δροσερό και ελαφρύτερο, ήταν το βασικότερο συστατικό και αυτό που έδινε όλη τη νοστιμιά στον ακανέ. Τα πετιμέζια και τα ρετσέλια αντικαταστάθηκαν με χυμό ζαχαροκάλαμου και νισεστέ. Σήμερα, αντί ζαχαροκάλαμου χρησιμοποιείται η ζάχαρη. Το παραπάνω μίγμα, αφού γινόταν πηχτό, πρόσθεταν φρέσκο βούτυρο και στο τέλος ξηρούς καρπούς. Κατά τη διαδικασία παρασκευής, επειδή χρειαζόταν πολύωρο ανακάτεμα, βρισκόταν πάντα εκεί ένας δούλος και ανακάτευε το μίγμα με μία ξύλινη κουτάλα. Όταν κρύωνε, το πηχτό αυτό μίγμα το έκοβαν σε μικρά κομμάτια και το σέρβιραν για γλυκό. Προέλευση ονομασίας : Σήμερα κανείς δεν μπορεί να πει με σιγουριά από που προήλθε η ονομασία ακανές . Η ιστορία του χάνεται στην εποχή της Τουρκοκρατίας και ίσως μαζί της χάθηκε και η ιστορία προέλευσης του ονόματός του. Βάσιμη ετυμολογία της λέξης δεν υπάρχει. Παρόλα αυτά όμως υπάρχει μία εκδοχή που ίσως να πλησιάζει περισσότερο την πραγματικότητα. Η λέξη "ακανές" προήλθε, όπως λένε, από την λέξη "ανακατεύω", γιατί το μίγμα χρειάζεται πολύωρο ανακάτεμα και από το κατάφαση "ναι", που έλεγαν πάντα οι δούλοι, οι οποίοι ήταν αυτοί που ανακάτευαν το μίγμα.Σήμερα Μετά την απελευθέρωση το 1913 από τους Βούλγαρους, οι δούλοι έγιναν μαστόρια και παρασκεύαζαν αυτό το γλυκό στην πόλη. Σήμερα, στην πόλη των Σερρών υπάρχουν τέσσερις -4- επιχειρήσεις που παρασκευάζουν τον παραδοσιακό ακανέ. Είναι: ο ακανές Ρούμπου , ο ακανές Βασάκη , ο ακανές Νικολαίδη και ο ακανές Μπουφίδη .
