Chinese Cuisines This presentation is going to be a variety of Chinese cuisines that the Chinese make in their hometown. Chinese chopsticks are made of unfinished wood (bamboo). They are straight with a blunt end.
Red Bean Soup 1 cup azuki (adzuki) beans  6 - 8 cups water  1 strip dried tangerine peel or fresh orange peel  1/4 - 1/2 cup (about 1 1/4 - 2 1/2 ounces) dried lotus seeds  6 - 8 tablespoons brown sugar, as desired
Garlic Chicken 1 pound boneless, skinless chicken breasts  Marinade:   1 tablespoon light soy sauce  1 tablespoon dry sherry  4 garlic cloves, finely minced  2 green onions, finely chopped on the diagonal   a few drops sesame oil  2 tablespoons light soy sauce  1 tablespoon dry sherry  1/4 teaspoon chili paste  Oil for stir-frying
Mu Shu Pork  1/2 pound pork tenderloin  Marinade:  2 teaspoons dark soy sauce  2 teaspoons Shao-Hsing rice wine or dry sherry  1 teaspoon sugar  2 teaspoons cornstarch  Sauce:  3 tablespoons water  3 tablespoons low-sodium chicken broth  1 tablespoon soy sauce  2 teaspoons Shao-Hsing wine or dry sherry  1/2 teaspoon salt  1/2 teaspoon sesame oil  1 teaspoon cornstarch  Other:  4 dried black mushrooms  4 tablespoons dried cloud ears or wood ears  2 tablespoons dried lily buds  1/2 cup canned bamboo shoots  2 green onions  2 slices ginger  2 eggs  1/2 teaspoon salt  6 tablespoons oil for stir-frying, or as needed  1 teaspoon sesame oil
Stir-fried Pork Tenderloin in Plum Sauce   1 pound boneless pork tenderloin, cut in 1" cubes  1 tablespoon oil  1/4 cup Chinese plum sauce  1/4 cup water  1 or 2 scallions, minced  Marinade:  1 tablespoon cornstarch  1 tablespoon soy sauce  1 tablespoon Chinese rice wine or dry sherry  1 tablespoon brown sugar  1 teaspoon sesame oil  1 clove garlic, minced
Pork Lo Mein With Ramen Noodles  1 pound boneless pork tenderloin  1 tablespoon soy sauce  2 teaspoons cornstarch  2 cloves garlic  2 green onions  2 packages Ramen noodles, chicken flavored  4 cups water  2 tablespoons teriyaki or Worcestershire sauce  2/3 cup chicken broth  4 tablespoons oil for stir-frying, or as needed   3 cups stir-fry vegetables  1 tablespoon cornstarch mixed with 4 tablespoons water
Won Ton Soup 18 - 24 won ton wrappers  Filling:  1/2 pound boneless lean pork, chopped finely  1 tablespoon soy sauce  1 tablespoon oyster sauce  a few drops sesame oil  1 teaspoon sherry  1/2 teaspoon sugar  1 green onion, finely minced  1 teaspoon cornstarch  2 dashes of white pepper  Other:  Water for boiling won tons  4 1/2 - 5 cups chicken stock  green onion, thinly sliced, as desired  a few drops sesame oil (optional)
Crab Rangoon  8 ounces cream cheese  8 ounces fresh crab meat or canned crab meat, drained and flaked  1 teaspoon red onion, chopped  1/2 teaspoon Lea & Perrins Worcestershire sauce  1/2 teaspoon light soy sauce  freshly ground black pepper, to taste  1 green onion, finely sliced  1 large clove garlic, smashed, peeled, and finely minced  1 package won ton wrappers  1 small bowl water  Oil for deep-frying, as needed
My thoughts on China I would love to go to China. China Cuisine is very elegant and I love Chinese food. Chinese use mainly animals and plants to cook. I like how they use chopsticks. Chinese food is one of my favorites.
