I am pleased beyond words to invite you to our 47th Chapitre in the Bailliage de
Manille of our great Confrerie.
The chapitre, as every member of the Chaine knows well, is an occasion we look
forward to with joyful anticipation, knowing the promise it holds—pleasures beyond
measure that leave indelible memories that live in our hearts forever.
We’ve held a number of chapitres in Manila, each one certified as memorable. We
always make it a point to make the next chapitre a few steps ahead of the last one,
enjoyment wise. We want to make every moment worth your while. And we have!
This year is no exception.
We’re filled with excitement as we mount for you a themed chapitre in the tradition of
“The Greatest Show on Earth.”
The Bailliage de Manille’s 2019 Chapitre draws inspiration from the Barnum & Bailey
circus that drew millions of fun-loving spectators to its gates year after year for 147
years. It was living proof that an enterprise that offers something that brings joy and
pleasure to the human breast are sure to endure the tests of time and, on practical
terms, the test of the purse. Note that the Barnum & Bailey Circus ran, albeit a bit
slowly, through the Great Depression, when penny-pinching was the way of life. In
fact, the show ended its operations just two years ago, in 2017.
We look at the show and wonder: what was the recipe for its longevity? No doubt the
acts performed by the trained animals—elephants, horses, camels, tigers—that
danced, jumped, skipped, turned around in choreographed precision thrilled the
audiences no end, as they imagined the time spent teaching the animals and getting
them to commit to memory the dance routines and perform them every day, on
command. What magic did the trainers wield on the animals to turn them into world-
class performers?
In our version of “The Greatest Show on Earth,” we shall have neither huge elephants
nor magnificent horses to perform for you.
What we offer will be a “show” that is certain to appeal to every one of our human
senses—sight, touch, smell, hearing, taste. Especially those that are directly
connected to food: sight, smell, and taste.
The look of the place, marked by understated elegance, will leave you breathless,
and the presentation of each dish, as it comes, will leave you in awe.
The mild and delicate aromas of food and wine will stimulate your taste buds, the
better for you to relish their unique flavors.
And, yes, your palate will sing praises to each dish, as you savor each morsel of food
and each sip of wine, and wish the night would go on and on, never to end.
And what of the sense of hearing? Ah, you will hear music! Even now, I can imagine
you closing your eyes as you listen to music, the music that comes with the pleasures
of the Chaine table—heavenly food paired with the sweetest wines in the company of
friends of kindred heart.
Our “Greatest Show on Earth” will be a marriage of the familiar and the new—the
familiar, the age-old traditions of the Chaine that are second nature to every one of
us; the new, the ways and manners of us, Filipinos, we whose reputation for
hospitality so precedes us that other cultures are wont to think that we invented it.
Like the Barnum & Bailey Circus, the Confrerie has stood for the longest time. Both
have proven their worth with their unquestioned longevity.
Our Chapitre will be a celebration of life’s most precious gifts and a reinforcement of
the bonds that hold us together.
We will offer you—on a silver platter—a version of “The Greatest Show on Earth” that
you will cherish and long remember. ‘Tis true: the mind may forget, but the heart
always remembers.

Greatest Show on Earth”—the 2019 Chapitre of the Chaine des Rotisseur’s Bailliage de
