- 5. Some Recipes to Enjoy Marlborough Pie From the Farm Journal’s Complete Pie Cookbook, 1965. The filling is lemon and applesauce, and very tasty. Flaky Pastry for 1-Crust Pie 1 c. sifted flour 1/2 tsp. salt 1/3 c. plus 1 tblsp. vegetable shortening 2 – 2 1/2 tblsp. cold water. Combine ingredients except water. Use pastry cutter, and add water as the dough starts to come together. Take ball of dough and roll it out on a lightly floured surface until the crust is large enough for a 8-9″ pie pan. Fold the dough and drape gently over the pie pan, covering all places and up the sides. Marlborough Pie Filling 1 c. unsweetened applesauce 3 tblsp. lemon juice 1/2 tsp. lemon peel 1 c. sugar 4 eggs, slightly beaten 2 tblsp. butter, melted 1/2 tsp. salt Chill pie shell while preparing filling. Combine applesauce, lemon juice and peel, sugar, eggs, butter and salt. Blend thoroughly and pour into pastry lined pie pan. Bake in 450F oven 15 minutes; reduce heat to 350F and bake 25 – 40 minutes longer, or until silver knife inserted halfway between center and edge of pie comes out clean. This will have the consistency of jelly. Peanut Butter Fingers– another easy and fun one, adapted from the 1967 Pillsbury Bake Off Cookie Book. 1 cup flour 1/2 cup sugar 1/2 cup firmly packed brown sugar (I used dark) 1/2 tsp. soda 1/4 tsp. salt 1/2 cup butter 1/3 cup creamy peanut butter 1 egg 1/2 tsp. vanilla extract 1 cup quick-cooking rolled oats 1 cup semi-sweet chips Preheat oven to 350F. Combine all ingredients in large bowl except chocolate pieces. Press in greased 9×13 pan. Bake for 20 – 25 minutes. Sprinkle immediately with chocolate pieces. Let stand 5 minutes, then spread evenly.
