Rendang is a traditional Indonesian beef stew that originated from West Sumatra. It is made with beef, coconut milk, chilies, shallots, garlic, galangal, lemongrass, turmeric, and lime or tamarind leaves. There are four symbols represented in rendang in Minangkabau society: beef represents tribal leaders, coconut represents intellect, chilies represent religious scholars, and spices represent society. Rendang has spread to many other countries in Asia and beyond while taking on local influences in preparation and ingredients.
