• Definition: Securing the production facility against malicious actions that threaten the safety of
a product. Often these actions are performed on purpose to harm an organization.
• Examples of food defence are:
• On purpose putting poison in the product
• Insert needles into the product
• On purpose putting a bacteria in a product
• on purpose contaminating products with allergens
Food Defence measures
• Camera’s
• Keep spaces locked and doors closed. An object in the door is
certainly not allowed because unauthorized persons and pests
can enter.
• Registration of all visitors
• Checking incoming and outgoing products.
• Report suspicious situations to your manager.
