10. Potatos
Potato (in the Levant and the Maghreb countries) or potato (in
Egypt) (scientific name: Solanum tuberosum) is a plant of the
nightshade family and it is one of the most widespread vegetable
crops in the world, and it is one of the most famous foods, and it has
nutritional value and health damages as well.
Potato was introduced to the Andes more than 4 centuries ago, and
it is a tuberous crop whose fruits grow under the ground, and has
become an integral part of many dishes in the world. Potato is a
food crop grown all over the world, and it is ranked fourth in
importance after wheat, rice and corn. Potatoes need special care
when stored, as they are stored in cold warehouses to avoid
spoilage.
Wild potatoes are found throughout the Americas, from the United
States to southern Chile, and it is believed to have been
independently domesticated and cultivated, but it has been proven
later in genetic testing for a wide range of wild varieties and species
that there was only one origin for the potato in the southern Peru
region at the time. Today, the far northwest of Bolivia, the potato has
been domesticated from 7,000 to 10,000 years ago, and there are
now more than a thousand varieties of potato.
The origin of the potato goes back to the Chiloe Archipelago and
that was the center of its cultivation in the aftermath of the Spanish
conquest of the Inca Empire, as the Spaniards exported potatoes to
Europe in the second half of the sixteenth century AD, and the sailors
transported the potato to all parts of the world, its cultivation was
slow and weak in Europe, Because the peasants were not confident
in growing this type of vegetable.

I learned to do my duty in occupational health, sanitation
and food hygiene training during a program on which you

32. MONTASER MOHMMED MASOUD
Professional Experience
I Me started his career in the kitchen in 1982. Since then he has worked for
several 5 star hotels which included 2 years as Culinary Director at Movenpick,
12 years as Executive Chef at InterContinental Makkah in Saudi Arabia and 13
years as Executive Pastry Chef at the Semiramis InterContinental. During his time
in Saudi Arabia he was a chapter manager of the Saudi Arabian Chef’s Table
Circle in Makkah. became a consultant for kitchen training in 2015 and
conducted a ‘Train the Trainer’ program at Ain Shams University. At present
Chef Montaser is a Consultant Trainer in food preparation at the Air Defence
department in Egypt.
Chef Montaser has obtained several diplomas from the American Hotel and
Motel Association including those for Food & Beverage Control, Food &
Beverage Management and Food & Beverage Service. He also obtained a
diploma in working with chocolate in Switzerland and a diploma of the Fabilio
International Pastry School.
He became an approved WACS Judge Category B in Dubai in 2013
