Canterbury ElderCollege Welcomes You!
Canterbury ElderCollege is about to launch its 17th Semester in Fall 2018; once again, our three Curriculum
Committees have worked enthusiastically to develop an amazing variety of courses. We can anticipate more
excitement as we move forward with this wonderful opportunity for older adults.
Canterbury College is the residential Anglican College affiliated with the University of Windsor. Our affiliated
ElderCollege program was founded in 2011 to provide educational outreach to the growing segment of the population
aged 55 and better, and to enhance the attractiveness of the Windsor/Essex and Chatham-Kent County regions as
retirement destinations.
ElderCollege's founding philosophy is to offer low cost educational opportunities throughout all those communities
where people live. We do this through a network of remote campuses. Our courses are intended to be fun and
stimulating for all participants and include opportunities for social interaction. And, all our courses are designed and
offered by volunteer instructors with a passion for their chosen subjects!
Canterbury ElderCollege was explicitly designed to provide pleasant learning opportunities for older adults who want to
experience enrichment of their lifestyle through active involvement in education, and thereby contribute to the social
and cultural enhancement of their community and their personal lives.
So as we welcome everybody to our new Fall 2018 Semester, we invite you and your friends to peruse the courses
being offered within our sparkling new Course Calendar. We hope you will have the opportunity to indulge in the
immense variety of interesting, exciting and often entertaining courses that have been developed for your educational
and social enjoyment. We are particularly pleased to introduce the first speaker of our new Distinguished Speaker

Other Programs Offered by Canterbury
Christian Studies Program
Canterbury College works in conjunction with Huron University College to provide educational opportunities which can
count towards a Certification in Theology.
General Interest courses can fulfil Lay Reader requirements and are open to all who are seeking a better
understanding of their faith and spirituality. Although these courses may be about religion they will not contain a
specific devotional component.
This semester, there are ten ElderCollege courses that participants can take which will count as credit for Lay Reader
courses in proportion to the number of course hours. We can provide, by your request, certification upon completion of
any of these Lay Reader designated ElderCollege courses. To receive a certificate a $15 (+HST) fee will apply.

Licentiate in Theology
This is a pre-degree diploma program intended for those who take seriously a call to Ministry while recognizing that "Ministry"
is made manifest in many diverse yet equal ways. For example, the LTh may be undertaken:
● for personal development, to deepen your knowledge for discipleship
● for those contemplating Ordained, Diaconal or Ordination for Specialized
Ministry
● for those already in Ministry and seeking to complement their education
● for those looking to work in Chaplaincy
By entering into agreements with other educational institutions, Huron University College has ensured that students across
Canada, and across denominational traditions, will have a full range of course options.

Sonnets: A Brief History
“With this key / Shakespeare unlocked his heart,” Wordsworth said of the sonnet. As a
literary form transcending language and time, the sonnet continues to be a common
creative ground for poets of all ages. This course will be an introduction to both tradition
and innovation in the sonnet form, with examples drawn from different periods of English
literary history. Authors canvassed may include Spenser, Sidney, Shakespeare, Lady
Mary Wroth, Milton, Charlotte Smith, Wordsworth, Coleridge, Keats, Elizabeth Barrett
Browning, Charles G.D. Roberts, Yeats, and Heaney. Attention will be paid to how
language, metre, rhyme, and structure all work to produce meaning in a literary form
whose reach goes beyond the unlocking of the heart.
Maximum of 50 participants.

Instructed by Dr. Douglas Kneale Managed by Dr. Gordon Drake
Dr. Kneale became Interim President and Vice-Chancellor of the University of Windsor on July 1,
2018, after serving as Provost and Vice-President, Academic since 2015. He is an award-winning
teacher and scholar of English Renaissance and Romantic literature, and has published widely on
Wordsworth, Coleridge, Milton, and others. Before joining the University, he was Dean of Humanities
at Brock University.

Registration
ElderCollege Membership is required to register for courses. You must register in advance through Canterbury College.
Payment is accepted by Visa, MasterCard or Cheque. (No person will be refused access to an ElderCollege course due
to financial hardship).
Refunds & Credits
Membership Fee is Non-Refundable. You must withdraw from a course no later than two days before the first session
of the course starts to be refunded or receive a credit for the Course Fee. Credits issued expire after 1 year and cannot
be redeemed at any time for a cash refund. Trips will have a different refund policy.
Course Cancellation
We reserve the right to cancel or re-schedule a course at any time. Every effort will be made to notify participants. You
can choose between a full refund or credit towards another course if we cancel the course.
Waitlists
If a course is full you may add your name to a waitlist. Adding your name to the list does not obligate you to take the
course. Your spot in the course is not guaranteed until payment is received. Waitlists only apply to the current semester
and do not carry forward into other semesters.

AMHERSTBURG CAMPUSExploring the Park House Museum in Amherstburg
Did you know that this house was built in the United States? And that it was floated down the river to
Amherstburg. This Course will tell the fascinating story. The Park House Museum is a 1790’s built home
that is decorated in Victorian fashion. We will take a tour of the house and pull back the layers of history.
You will learn of the house’s journey from the U.S. to Canada, its ties to the Fur Trade, the American
Revolution and the shipping industry. You’ll meet some significant local people and hear the social
history of the building’s past owners. Class Size: Max. 15

Instructor: Stephanie Pouget-Papak Course Manager: Kaye McMann
BIO NOTE: Stephanie is the curator/administrator of the Park House Museum for 5 years. She is a
graduate from the University of Windsor with 20 years’ experience in the field of history. Stephanie
enjoys the museum's ability to combine temporary exhibits and permanent exhibits by tapping into the
220 year history; however, what she finds most fascinating is the museum's link to the American
Revolution, the Fur Trade, and the Park family's strong female presence in the Victorian era.
AMHERSTBURG CAMPUS
“Free at Last” The Amherstburg Freedom Museum
In this course you will visit the Museum founded in 1975 by local residents. It preserves and presents
artifacts of African-Canadians, many of whose ancestors had entered Canada as refugees from
slavery in the United States. They settled in Canada in order to be beyond the reach of the US
Fugitive Slave Act. The museum complex consists of the museum building, the Taylor Log Cabin (an
historic home from the period) and the Nazrey African Methodist Episcopal Church National Historic
Site. The church aided refugee slaves and was a stop on the Underground Railroad. There will be a
presentation about those settlers who populated Essex County, as well as a tour of the museum and
site. Class Size: Max. 15

AMHERSTBURG CAMPUSRemembering the Royal Visit of 1939
In 1939 Canada stood transfixed as the new King and Queen embarked on their first Royal visit to
Canada. The monarchy needed a boost after the abdication of King Edward VIII. Canada wanted to
show off its new relationship with the Crown. Ironically the looming crisis that became WWII made
this a ground-breaking event. Windsor had to fight for inclusion in the itinerary. The event was to
become probably the largest gathering ever in the city. This course is designed to review the local
aspects as well as the national scope of the visit. As it slips from living memory, it deserves a place in
the era that became consumed by WWII. Class Size: Max. 24

Instructor: Gary Wells Course Manager: Jim McTavish
BIO NOTE: Gary is a graduate of the University of Windsor in Economics and Political Science. He is
an active researcher on the WWI and WWII eras and tries to incorporate different aspects into the
broad historical events. His goal is to capture important, but fading, events before the personal
memories are lost.
AMHERSTBURG CAMPUSRetirement: The IV Pillars
During this two-session course we will explore the four-pillars of retirement, in an exciting and interactive way. It is
our mission to educate course participants in all aspects of their financial plan, while providing transparency in the
industry. Our course will allow you to walk away knowing if your financial plan is on track and lay aside any worries.

#1: Starting out with Pillar One: Optimistic Aging and how your Wealth is your Health. Pillar Two will explore income
strategies, minimizing taxation, maximizing wealth, and strategies for all risk tolerances
#2: Our continuation into Pillar Three - Protecting your lifetime assets and income. Answering the age-old question
of will I run out of money and will I be okay? Lastly, is our Pillar Four, establishing your legacy. We will be going in
depth to cover the estate process, probate, taxation, duties we put on our executors and how to keep family
harmony

BIO NOTES: Bob and Nicole are a dynamic duo recognized for their information sessions across Windsor-Essex
County. They feel education and transparency are key to your financial well-being. Bob has been in the financial
industry since 1987 with 20 years of banking experience. Partnered with, Nicole who has been in the business over
four years and is in the process of completing her Certified Financial Planning (CFP). Together they run a multi-
generational practice with the goal of enriching lives.
CHATHAM-KENT CAMPUSChatham-Kent Does Grow for the World!
Agriculture in Chatham-Kent is a $3 Billion economic driver. We grow over 70 different crop varieties.
How did agriculture come to be such a significant sector in Chatham-Kent? What are the main crops
and how are they economically impacting our community and our province? What is being done in
Chatham-Kent to help move agriculture forward? What are some of the challenges and opportunities
for our farming community? How does the local food movement impact Southwestern Ontario? What
is our farming community doing to help with our environment? We will examine these questions and

Instructor: Kim Cooper Course Manager: Diane Gilhula
BIO NOTE: Kim has worked in the agriculture sector for over 45 years including time with M. J. Smith,
W. G. Thompson, the Ontario Soybean Growers, and Southwest Ag Partners Kim works for the
Municipality of Chatham-Kent’s Economic Development Services as their Agricultural Specialist. He is
involved in a great number of ag-related organizations and committees and writes a weekly
agricultural column for the local media. He is a 1975 Ridgetown College graduate and then attended
the University of Guelph for the next two years. Kim is also an ordained minister and is the former
pastor at Dover Centre Church.
CHATHAM-KENT CAMPUSCompassion Fatigue
Being a care partner or working as a “helping Professional” can lead to profound emotional and physical
exhaustion over a period of time. Learn what Compassion Fatigue is, how you can recognize the
symptoms and what you can do to decrease your risk of developing it, through self care, relaxation training
and stress reduction techniques. The first segment will include familiarizing yourself with the concept of
compassion fatigue and understanding the cost of caring. It will assist you with recognizing your own
warning signs, whether it be physical, behavioural or psychological. The second segment will include a
quality of life self test, tracking your stress at home or work, and learning self care through relaxation
training and stress reduction techniques. Class Size: Max. 20

BIO NOTE: Tara, B.A. (Hon) from the University of Windsor, is the Public Education Manager and First
Link Coordinator at the Alzheimer Society Chatham-Kent where she has worked for 8 years. Tara also has
15 years’ experience working within various retirement facilities throughout Chatham Kent. It is her
aspiration to improve the quality of life for people who have been diagnosed with Alzheimer’s disease and
related dementias. She is a frequent speaker for Community groups, teaches a learning series for family
caregivers of individuals diagnosed with a dementia, trains GPA (Gentle Persuasive Approaches) and
U-first in the Long-Term Care Homes/retirement homes & hospitals.

Downsizing or Reorganizing: A How-To!
Are you thinking about Downsizing? Are you the Executor of an Estate? Want some tips? This course
begins with an introduction to professional organizing. What is a Professional Organizer and what do
they do? What are the key organizing principles and processes? What are the benefits of working with a
Professional Organizer? Once the basics have been covered, we will focus on some practical tips that
you can apply to your own downsizing project, and if you are the Executor of an Estate, the ‘do-it-
yourself’ house clear out (there are similarities). What are the key questions that you should ask
yourself? Which room do you start in first and why? What spaces, tasks and projects tend to be the

Instructor: Heather Anne Campbell Course Manager: Alice Silcox
BIO NOTE: Heather Anne, Managing Director of the Duffy Group, holds a Master of Health Science
from the University of Toronto and has recently earned the Trained Professional Organizer designation
from Professional Organizers in Canada. After a diverse career spanning more than 35 years in health
administration and management consulting, she has taken her project management, process
improvement, problem-solving abilities and many years of coaching and mentoring in a new and
exciting direction which includes Organizing Solutions a division of The Duffy Group.
CHATHAM-KENT CAMPUSFrauds and Scams
Most of us have been approached by someone who wanted to separate us from our hard-earned
money. Many of us know of others who were not as aware of the danger of being scammed. Special
Constable Tamara Dick of the Chatham-Kent Police Service will be bringing awareness on the frauds
and scams that have or could affect you in the future. She will discuss telephone, internet, mail and
door-to-door scams and frauds. She brings life to her presentations by discussing personal situations
including many of the encounters she has had in her policing career. We are sure that you will enjoy
her talk and learn of many of the frauds that are out there. Class Size: Max. 20

Instructor: Tamara Dick Course Manager: Diane Gilhula
BIO NOTE: Special Constable Tamara was formerly employed by Wallaceburg Police Service and with
the amalgamation, she has now been employed for 21 years in total. Her background consists of being
a front desk officer at police headquarters in Chatham and working within the court house. In 2015, she
became part of the Crime Prevention and Public Safety unit of Chatham-Kent Police Service. Now, she
is one of three colleagues who attend Chatham-Kent schools to educate our children and attend
community events to educate adults on the law.
CHATHAM-KENT CAMPUSNames and More Names: Memories of Chatham-Kent
Did you ever try to remember the name of the 14th president of your club? Or the president of the minor
hockey league where your child played? As an historical author, Fred often found during his research on
other books and manuals, that a lot of organizations cannot name their past presidents, chairpersons
and leaders. His most recent book is titled "I Remember: Chatham ‘N Kent’s leaders." In it he has
compiled a list of over 300 organizations in Chatham, and their leaders. He acknowledges it is not
complete because many records or information are unavailable. This information will help people who
are looking up information about their family. He will disclose some of the fascinating stories he found in
unearthing these lists. Class Size: Max. 20

Instructor: Fred Osmond Course Manager: Beverlee Bodnar
BIO NOTE: Fred is a Kent County resident with varied interests, including local history and meeting
people. His love of history has turned him into a local historian, resulting in 5 books that capture the
past. Educated at St. Clair College and University of Windsor, he has had a varied career path. As well
he has been active as a volunteer in the community.
CHATHAM-KENT CAMPUSNews: Fact, Truth, or Fake… Seeking Objectivity in a Subjective World
In modern, democratic societies, widespread distrust of the News Media is a relatively new phenomenon. In
this discussion we will explore the concept of legitimate News - and why so many people view the Fifth Estate
with a cynical eye. We will also discuss why Journalists, whose essential role is to scrutinize relevant
topics/issues on behalf of the public, are under increasingly intense scrutiny by the public. We’ll explore the
evolution of Propaganda, and its seductive twin the Conspiracy Theory - and how even intelligent, educated
people can be manipulated by quasi-rational, strategic rhetoric. Regarding the Internet and accusations of it’s
lowering the Journalistic bar: this will NOT be a public flogging of technology. A too-often-repeated sneer in
Reporter circles is: “The Internet may be the first truly democratic media, but democracy’s flaw is that every
idiot gets to vote.” The journalist – as an agent for the Public – perceives of an issue for its potential
relevance, followed up with objective validation of that perception through investigation and analysis. Now,
should that journalist’s final report stimulate informed discussion and public debate? That’s the goal of every
serious Journalist. Here’s hoping you will take an engaged role in our discussion. Class Size: Max. 20

BIO NOTE: With 35 years in the commercial media business, primarily in broadcast Radio, along with forays
into TV, newspaper, magazine and digital mediums, Dennis has worn a lot of hats; from ad- sales and copy
writing, announcing and reporting, program editor and director, culminating as the founding owner and
manager of an Agri-business News Radio Network. For 15 years, with a full-time staff of 4 people, daily
Foodland Forum programs were broadcast on 23 radio stations.

and store high quality herbs for many years. You will find that your own herbs will look and taste the

The Earth is in peril. We Ursulines joined the earth-wide response to see what we could do to make a
difference. We will share with participants the values that shaped our decisions and the features we
implemented in our building, Villa Angela. Participants will be invited to see possibilities for change in their

#1: The Inside Story: Can you imagine a building the size of Villa Angela with no furnace and no air
conditioning unit? Have you heard about “grey water” as part of water conservation? Let’s look at ways
that you can increase the “greenness” of your home?
#2: A Gem in the North–Carolinian: We’ll look at local landscape – the striking examples of Carolinian
trees and shrubs and unique uses of recycled materials. How can you promote conservation in our
region?
#3: Rocket Science: Our giant composter, “The Rocket”, does more than serve a practical purpose. It has
invited the collaboration of local organizations –a communal effort at recycling and composting. Is the
“Blue Water Project” a possibility in our region?

From late 1929 until war broke out in 1939 Canadians experienced and endured a massive global
depression, plus in the Prairies a devastating drought. In this course we will explore both the social
and political impacts of that Depression. We will discover how fear led to an almost total collapse of
civil society. And we will learn how the Depression resulted in political change and how myopic political
leaders reacted and all too frequently failed to appreciate the magnitude of what was happening to

ESSEX CAMPUSExperience Uganda—Helping Children and Overcoming Poverty
Save African Child Uganda (SACU) was founded in 2010 by a retired Canadian teacher, Geri Sutts,
when she met a young Ugandan, Ivan Nersa, who longed to help the children in his village, Buwundo.
Since then SACU has saved many children from slavery, starvation, illness and child abuse. In 2014,
SACU’s first shelter for homeless children was built. A second shelter was later added, with the help
from an anonymous donor. In this course you will have the opportunity to see and hear how SACU
cares for 160 children daily and educates them with the help of seven Essex County residents. Another
life-giving project for girls was founded by a Ugandan teacher-counsellor, who saw education as a way

Science & Relationship Between God & the Universe
For hundreds of years humans had imagined the universe as a dome with the earth as a flat disc in the
center of a universe overseen by various gods. Today we realize that the earth is but a tiny dot within a
much vaster universe and the “gods” concept became more elusive or, perhaps it hasn’t! This short
course will take us on an historical journey and we shall see how humans have explained and
understood the universe around them and the role of the omnipotent God in creating that universe. We
will examine several questions: Can the universe exist on its own? Did the universe need a creator? Are
there universal constants? If so, need they be so precise as to assure the universality of the universe?”

ESSEX CAMPUSVanished Villages I: Exploring Part of Our Region
We are all part of history because we all were born somewhere, and we shall end somewhere. Along
the way we will enjoy families, careers and life. Yet, sometimes where we “came from” no longer exists
or exists only as a memory for a few. It is possible to identify in excess of 200 villages in Essex and
Kent Counties that once existed, offered life and a future but, for many reasons they vanished. In this
course we shall visit and talk about some of those now, often, vanished villages. We will both explore
our region and explore some of the reasons why some vanished or have been reduced to many fewer
homes and businesses. Places like Edgars, Barretville, Elford, Bulgetown and Klondyke, Albertville and
Union. Places with a past of which the memories still remain. And, besides, when was the last time you

Streams and rivers in Essex County experience some of the highest levels of nutrient and E.coli
concentrations in the province, ranking our streams at the bottom of the grade scale. On a provincial
scaling system, the average score is a ‘C’, while Essex streams receive ‘D’s and ‘F’s. In our backyard
the shores of Lake St. Clair and Lake Erie experience annual harmful algal blooms as a result of excess
nutrients from our streams and those through the Lake Erie watershed. In this course you will learn
about ERCA’s water quality monitoring program, the issues facing our streams, and the actions that

HARROW CAMPUSAntique Ladies’ Undergarments & My Mother’s Trousseau
In this two-part course we shall explore history from a very personal and even intimate manner. Two members of
Questers (South Shore Seekers Chapter) will take you on a most fascinating exploration of classic vintage women's
undergarments. Quester Member Valerie, and the lingerie collection she will display and discuss, belongs to the Park
House Museum in Amherstburg and dates from the forming of Fort Malden in 1796 until the end of WWII in 1945. Also,
we will discover what a Mother created almost a century ago as her trousseau for her anticipated married life. Giovanna,
the second Questers Member, and her sister Maria will share their mother’s trousseau. Born in 1910 and married in
1936, their mother did what many young girls did in those days— she started filling her hope chest in preparation for the
day she would marry. Her family owned a large loom and she began to weave cloth that she later made into bath towels,
table cloths etc. She bought fabric for sheets, pillow shams and underwear and started embroidering beautiful designs
on them. They still have the sheets and shams (she probably used them only a couple of times during her first week of
marriage) but alas, the underwear (bloomer type) has long disappeared as when Maria was a teen she recut them to

a school program. Within a short time, she became the Museum curator. It was a job she loved and stayed with for 27 years!
Maria and Giovanna, were both born in Sicily and emigrated to Canada with their mother and two brothers in 1951 at the
age of 7 and 9 respectively. Giovanna went to the University of Toronto majoring in English and French then taught both at
the high school and elementary level. Maria graduated from the Special Art Program at Central Tech in Toronto. She worked
in the art departments of several large companies. They are now both retired (one widowed, one divorced), live together and
run a unique B & B in Kingsville.

Mission Work in Haiti
This course will share experiences of the presenters in travelling to a third world country and engulfing
themselves in the culture of Haiti. Learn about their encounters with ways of life there including the
schools, Christianity, foods and transportation. Hear about the challenges that were faced while
delivering medical clinics in the impoverished villages in a country that has few resources. They
transported hockey bags filled with medical supplies, milk bag mats, and donations from Harrow and

Various tobacco processing companies made their home in Kingsville from the late 1800’s to the mid
1970’s. This course will explore the different kinds of tobacco grown and the special needs of each. As
well, numerous anecdotal stories will be included to provide a better understanding of the industry.
The talk is not meant to be anti or pro tobacco. It will show that the industry was an important factor in
allowing Kingsville to avoid a number of problems associated with the depression. Class Size: Max.

Most people are familiar with the general features of lumbering in the 19th century but we also lack
many of the details. This course will cover many of the details of the industry and changes over time. In
addition, it will continue the story of the lumber out of the forest and on to market. We shall also have a
first-hand look at some of the tools used and learn about some events such as the Shiner’s War. Class

#1: We will follow the timber and lumbermen from the shanties through the forest and waterways to the
Ottawa River learning of the various hardships and examine the tools.
#2: Getting the lumber to Quebec City using the famous and amazing river rafts and timber slides. This

The worst storm in recorded Great Lakes history occurred on November 8-10, 1913. Severe and wide
ranging, this fury destroyed twelve ships with all hands lost, in four of the five Great Lakes (although
Huron was the hardest hit) and did serious damage to many more vessels. Learn about these ships and
hear some unusual tales about sailors who struggled with this epic upheaval. Stories include the case of
a body from one lost ship wearing the lifejacket from another lost ship, the sailor who attended his own
funeral, information about many of the individual sailors lost in the storm, PLUS find out about the

What on earth is geocaching? It’s a game that uses GPS coordinates to find cleverly hidden containers,

LASALLE CAMPUSIslam in Focus: One Theme, Four Topics
This series of lectures is so structured as to inform course participants about the growth of Islam in Western
Europe and Canada in the last half-a-century or so. There was little mention of Muslims in Canada during the
Centennial year (1967) but according to Canada's 2011 National Household Survey, there were 1,053,945
Muslims in Canada, or about 3.2% of the population, making Islam the second largest religion in the country
after Christianity. Islam has been present in continental Europe since the 8th century – controlling a region in
Spain, known as Al-Andulus between 711 and 1492. The growth of Islam in Western Europe since WWII has
been phenomenal. There are many causes, including needed workforce, refugee and asylum admittances
and conversions, etc. We will look at the Muslim demographics and institutions in a number of countries of
Western Europe, including Sweden, Germany, France, the U.K., the Netherlands, Belgium, etc... The

Ontario’s Forgotten Fruit: The Pawpaw
This course will explore one of our region’s most mysterious native trees: The Pawpaw. Through a
combination of indoor and outdoor sessions, we will get acquainted with this often-misunderstood tree,
along with its unique characteristics, quirky history and potential opportunities as a local food crop. We
will also experience these trees firsthand through a tour of a natural woodland Pawpaw grove, as well
as a landscape setting. There

By popular request ElderCollege’s thoroughly enjoyable course in which we match Ontario craft beers
with spare ribs (and more) returns. Ontario is home to over 80 craft breweries, but Essex County is
home to only one remarkable rib house and that is Ray’s Rib House in South Leamington. Ray’s Rib
House is considered one of North America’s finest rib houses according to noted spare rib
connoisseur, Dr. Robert Agranoff of Indiana University who travelled to Leamington just for the ribs.
Agranoff declared Ray Youssef’s spareribs to be “the finest he had ever tasted”. This course will
introduce you to styles and types of crafted beer including a plentiful array of craft beers to be
“tasted”. The beers will be accompanied by spare ribs with various sauces and other food goodies.
This is a food and drink exploration course in which Ontario Craft beers will be paired with various
styles of spareribs and perch. Remember, you must be aged 55 or better to fully appreciate the

LEAMINGTON CAMPUSVersatile Muffins
Since they are always better homemade than store bought, you will want to join us for this hands-on
course where you will be mixing & baking a few different varieties of delicious muffins. We will make
both sweet and savoury versions of these morsels of goodness, while learning the trick to create
muffins with an excellent airy texture. Also, there will be the opportunity to browse through a long-held
and beloved recipe book where you may find even more muffins you’d like to try baking at home.
Taking this course will give you enhanced baking skills, some new recipes and (if you don’t eat them all
in class) a few muffins to go. Feel free to bring an apron if you wish. Class Size Max: 10

Learn how to be more effective with your Android Smartphone or Tablet. Bring your own device (Smartphone or Tablet) and
learn about features common to Android devices: Buttons; Screen Layout; Gestures; The Keyboard; Working with Application
Icons; What happens when you call, text, use data, or use wi-fi; Common Settings such as sound, display, battery & power
saving; Common Applications, such as Clock, Phone Calls, Messaging, Email, Contacts, Calendar, Search, Camera, Gallery
and Google PlayStore. Time permitting the last class will be an interactive lab where the students can request instruction on

TECUMSEH CAMPUSConsumer Service Contracts: Spot & Avoid Dangerous Ones
We are all consumers and all likely to encounter those offering us consumer service contracts. We will
explore this subject and we will seek to equip you with knowledge needed to identify and avoid
dangerous pitfalls in some consumer service contracts. The course will focus upon the Ontario
Consumer Protection Act and the rights consumers have to cancel or amend certain contracts. We will
discuss proper and improper solicitation techniques some industries are using and look at different
avenues a consumer can take when they find themselves committed to contract terms that they did not
understand or anticipate. We’ll also have an overview the provincial Ministry of Government and
Consumer Services and the Small Claims Court system. The aim is to empower consumers to know
and enforce their rights. Class Size Max: 15

BIO NOTE: Lilian is Review Counsel with Community Legal Aid, a joint project between the Faculty of
Law, U of W and Legal Aid Ontario. The clinic offers legal services to financial eligible community
members. Her practice focuses on consumer protection and wrongful dismissal claims in Small Claims
Court and she previously practiced in Estate Litigation and Elder Law.
TECUMSEH CAMPUSAge Well: Move to Be Strong! Exercise as Medicine
Our bodies were designed for movement, but a recent study revealed that in Canada 93.6% of older adults
are sitting (sedentary) for more than 8 hours per day. This behavior can lead to falls which can result in
chronic pain, reduced mobility, loss of independence and reduced life expectancy. Exercise is one of the best
interventions to aging well, minimizing fall risk factors and preventing falls. As the late physician Dr. Ronald M
Davis stated: “If we had a pill that contained all the benefits of exercise, it would be the most widely prescribed
drug in the world.” In this informative and interactive course, you will learn how to get moving more and sitting
less. It’s even as simple as establishing a habit of moving moments during sitting time and throughout the day.
You will be introduced to balance and strengthening exercises as well as some fun and effective tools that
incorporate brain fitness and help promote neuroplasticity. Join the movement to get people moving and make
some fitness friends along the way! Class Size: Max. 20

over 12 years. Currently she’s the District Coord. for the SMART (Seniors MaintainingActive Roles Together)
Exercise & Falls Prevention Program. Khrista advocates and practices an evidence-based, inclusive approach to
physical activity and health promotion as well as the development of goal-oriented functional exercise programs
for older adults and seniors of all abilities. She has certifications from the Canadian Centre for Activity and Aging,
is a Certified Ageless Grace Educator and is committed to professional development, regularly attending local,
regional and provincial knowledge translation and continuing education events.
TECUMSEH CAMPUSFaith, Politics & Science in Greater Middle East
This course will review 1400 years of Muslims lands quest to find a balance between faith and worldly life.
Religious elements, which were on fringes of Muslim societies, were empowered and brought to center stage
which ironically resulted in present unrest in Middle East. From early centuries, development of Islamic law and
quest for knowledge created an enhanced culture of learning. Most early scholars came from Central Asia. They
were inheritors of Buddhist techniques of debate and endowed Viharas (Buddhist monasteries). Muslims adopted
these techniques and established Madrassas (the colleges). These cultural practices were transposed to Europe
during the Crusades thereby stimulating a scientific culture. In the Muslim world traditional Islamic forces, most
notably those led by 12th century Persian philosopher Al-Ghazali put a stop to this Golden Age. Further
devastation was caused by Mongols invasion in 13th century. Muslims recovered from this setback and witnessed
a period of territorial expansion from 1500 to 1750 but remained technologically stagnated. Muslim societies failed
to defend themselves. European empires subjugated every Muslim country and drew political borders at their will
ignoring ethnic and sectarian realities which eventually caused conflict and displacement. One reaction to the
European challenge was in the form of the Islamic Modernism Movements of 18th & 19th centuries which
encouraged adoption of Western education. Promoters of this enlightenment led and won freedom from colonial
powers. Class Max: 10

This course is a continuation of the Guitar: Learn to Play course. Participants must have their own 6-
string guitar or baritone ukulele. We will review the knowledge already acquired in previous courses and
look at any difficulties the course may have encountered while practicing on their own. Participants who
did not complete the “Guitar: Learn How to Play” can join if they some guitar playing experience. Class
Size: Max. 12
SPECIAL NOTE: You must supply your own guitar or ukulele.
#1: Review songs and brush up on techniques. Work on F#m Em chords and learn songs using these chords.
#2: Learn to play in the key of G & using G, Em C and D7 chords. Learn appropriate songs.
#3: Practical application of the Capo & using it with our music. How it helps in playing and learn more songs.
#4: Chord chart: explain how it’s used to find new chords from songs you want to learn in the future. Learn
more songs.
#5: Intro. to fingerpicking & basic fingerpicking styles and how to use with a variety of songs. Learn more

For those who have little or no experience with Judaism, entering a Jewish space can feel
overwhelming and intimidating. They may worry: Will I be accepted? Will my questions be welcomed?
What if I have doubts? Will I be pressured to make a commitment? Many have never-before entered a
synagogue or met a rabbi. In this course, we welcome you to ask questions, explore, and discover the
Jewish community! In a relaxed and comfortable atmosphere, we will discuss Jewish approaches to
spirituality, faith, text, values, community, and Israel. All are welcome to participate, including those
who are just curious, spiritual seekers, interfaith partners, and Jews. Class Size: Max. 24

BIO NOTE: Rabbi Goldstein has served congregations in Florida, Missouri, New York, New Jersey,
and Illinois. She has also served as a university professor, a therapist, and a chaplain. She received
her B.A. from Barnard College of Columbia University, her M.A., Ordination, and an Honorary Doctor
of Divinity from Hebrew Union College-Jewish Institute of Religion in New York. She additionally has
an M.A. in Social Work, numerous certifications from the Gottman Institute, and certifications from
Harvard University, Boston University and the State University of New York.
WINDSOR CAMPUSAmerican Artists and “Ofrendas”: A Day Trip to the DIA!
Join us to visit one of the largest and most significant art collections in the United States! Explore the
encyclopedic collection spawning ancient Egyptian and European works, to contemporary art. As an
introduction to our day trip you will attend an informative 2-hour session which will include American
artists Copley, Cole and Church, as well as the painting by J. M. Whistler that was the subject of a court
battle. In the second session all participants will take a bus from Windsor to the Detroit Institute of Art. During
our visit you will also get to see the DIA-sponsored special exhibition which celebrates the Mexican tradition
of “Ofrendas”, altars that commemorates lost loved ones. Class Size: Min. 15 - Max. 23

Ancient Greeks gave us the Myths – the stories of gods and goddesses along with their interaction with
mortals. The literature of Homer, the plays of Sophocles and the writings of Hesiod introduced us to the
families whose characters and exploits ultimately propelled the myths into present day. Much of Greek
art depicts these legends. Later European artists portrayed these same stories in their paintings and

  • 1. Canterbury ElderCollege Welcomes You! Canterbury ElderCollege is about to launch its 17th Semester in Fall 2018; once again, our three Curriculum Committees have worked enthusiastically to develop an amazing variety of courses. We can anticipate more excitement as we move forward with this wonderful opportunity for older adults. Canterbury College is the residential Anglican College affiliated with the University of Windsor. Our affiliated ElderCollege program was founded in 2011 to provide educational outreach to the growing segment of the population aged 55 and better, and to enhance the attractiveness of the Windsor/Essex and Chatham-Kent County regions as retirement destinations. ElderCollege's founding philosophy is to offer low cost educational opportunities throughout all those communities where people live. We do this through a network of remote campuses. Our courses are intended to be fun and stimulating for all participants and include opportunities for social interaction. And, all our courses are designed and offered by volunteer instructors with a passion for their chosen subjects! Canterbury ElderCollege was explicitly designed to provide pleasant learning opportunities for older adults who want to experience enrichment of their lifestyle through active involvement in education, and thereby contribute to the social and cultural enhancement of their community and their personal lives. So as we welcome everybody to our new Fall 2018 Semester, we invite you and your friends to peruse the courses being offered within our sparkling new Course Calendar. We hope you will have the opportunity to indulge in the immense variety of interesting, exciting and often entertaining courses that have been developed for your educational and social enjoyment. Other Programs Offered by Canterbury Christian Studies Program Canterbury College works in conjunction with Huron University College to provide educational opportunities which can count towards a Certification in Theology. General Interest courses can fulfil Lay Reader requirements and are open to all who are seeking a better understanding of their faith and spirituality. Although these courses may be about religion they will not contain a specific devotional component. This semester, there are ten ElderCollege courses that participants can take which will count as credit for Lay Reader courses in proportion to the number of course hours. We can provide, by your request, certification upon completion of any of these Lay Reader designated ElderCollege courses. To receive a certificate a $15 (+HST) fee will apply. These courses are marked with a certificate symbol like this ! Licentiate in Theology This is a pre-degree diploma program intended for those who take seriously a call to Ministry while recognizing that "Ministry" is made manifest in many diverse yet equal ways. For example, the LTh may be undertaken: ● for personal development, to deepen your knowledge for discipleship ● for those contemplating Ordained, Diaconal or Ordination for Specialized Ministry ● for those already in Ministry and seeking to complement their education ● for those looking to work in Chaplaincy By entering into agreements with other educational institutions, Huron University College has ensured that students across Canada, and across denominational traditions, will have a full range of course options.   • 8. ELDERCOLLEGE INVITES YOU to attend the our NEW Distinguished Speaker Series with University of Windsor Interim President DR. DOUGLAS KNEALE Saturday, November 24th 1:00pm – 4: 00pm Canterbury College, 2nd Floor 2500 University Ave. W. Sonnets: A Brief History “With this key / Shakespeare unlocked his heart,” Wordsworth said of the sonnet. As a literary form transcending language and time, the sonnet continues to be a common creative ground for poets of all ages. This course will be an introduction to both tradition and innovation in the sonnet form, with examples drawn from different periods of English literary history. Authors canvassed may include Spenser, Sidney, Shakespeare, Lady Mary Wroth, Milton, Charlotte Smith, Wordsworth, Coleridge, Keats, Elizabeth Barrett Browning, Charles G.D. Roberts, Yeats, and Heaney. Attention will be paid to how language, metre, rhyme, and structure all work to produce meaning in a literary form whose reach goes beyond the unlocking of the heart. Maximum of 50 participants. $10 (+HST) for ElderCollege Members $25 (+HST) for non-Members This course is not included in the Buffet-Course Fee Instructed by Dr. Douglas Kneale Managed by Dr. Gordon Drake Dr. Kneale became Interim President and Vice-Chancellor of the University of Windsor on July 1, 2018, after serving as Provost and Vice-President, Academic since 2015. He is an award-winning teacher and scholar of English Renaissance and Romantic literature, and has published widely on Wordsworth, Coleridge, Milton, and others. Before joining the University, he was Dean of Humanities at Brock University.
  • 9. POLICIES Registration ElderCollege Membership is required to register for courses. You must register in advance through Canterbury College. Payment is accepted by Visa, MasterCard or Cheque. (No person will be refused access to an ElderCollege course due to financial hardship). Refunds & Credits Membership Fee is Non-Refundable. You must withdraw from a course no later than two days before the first session of the course starts to be refunded or receive a credit for the Course Fee. Credits issued expire after 1 year and cannot be redeemed at any time for a cash refund. Trips will have a different refund policy. Course Cancellation We reserve the right to cancel or re-schedule a course at any time. Every effort will be made to notify participants. You can choose between a full refund or credit towards another course if we cancel the course. Waitlists If a course is full you may add your name to a waitlist. Adding your name to the list does not obligate you to take the course. Your spot in the course is not guaranteed until payment is received. Waitlists only apply to the current semester and do not carry forward into other semesters. Privacy Policy All information obtained at Canterbury ElderCollege will be carried out in accordance with the policies of the Personal Information Protection Act. Instructors are given participant contact information for the purpose of conducting their course. From time to time, photographs or video clips may be taken during events or courses.   • 10. AMHERSTBURG CAMPUSExploring the Park House Museum in Amherstburg Did you know that this house was built in the United States? And that it was floated down the river to Amherstburg. This Course will tell the fascinating story. The Park House Museum is a 1790’s built home that is decorated in Victorian fashion. We will take a tour of the house and pull back the layers of history. You will learn of the house’s journey from the U.S. to Canada, its ties to the Fur Trade, the American Revolution and the shipping industry. You’ll meet some significant local people and hear the social history of the building’s past owners. Class Size: Max. 15 SPECIAL NOTE: The 2nd floor of this museum is not wheelchair accessible. 1 Wednesday 1:00pm - 3:00pm October 3 LOCATION: Park House Museum, 214 Dalhousie St. COURSE FEE: $25 + HST + $5 Museum Fee = $33.25 Instructor: Stephanie Pouget-Papak Course Manager: Kaye McMann BIO NOTE: Stephanie is the curator/administrator of the Park House Museum for 5 years. She is a graduate from the University of Windsor with 20 years’ experience in the field of history. Stephanie enjoys the museum's ability to combine temporary exhibits and permanent exhibits by tapping into the 220 year history; however, what she finds most fascinating is the museum's link to the American Revolution, the Fur Trade, and the Park family's strong female presence in the Victorian era.
  • 11. AMHERSTBURG CAMPUS “Free at Last” The Amherstburg Freedom Museum In this course you will visit the Museum founded in 1975 by local residents. It preserves and presents artifacts of African-Canadians, many of whose ancestors had entered Canada as refugees from slavery in the United States. They settled in Canada in order to be beyond the reach of the US Fugitive Slave Act. The museum complex consists of the museum building, the Taylor Log Cabin (an historic home from the period) and the Nazrey African Methodist Episcopal Church National Historic Site. The church aided refugee slaves and was a stop on the Underground Railroad. There will be a presentation about those settlers who populated Essex County, as well as a tour of the museum and site. Class Size: Max. 15 1 Friday 1:00pm – 3:00pm November 16 LOCATION: Amherstburg Freedom Museum, 277 King St. COURSE FEE: $25 + HST + $5 Museum Fee = $33.25 Instructors: Museum Staff Course Manager: TBD BIO NOTE: The presentations and tour will be provided by museum staff.

Ironically the looming crisis that became WWII made this a ground-breaking event. Windsor had to fight for inclusion in the itinerary. The event was to become probably the largest gathering ever in the city. This course is designed to review the local aspects as well as the national scope of the visit. He acknowledges it is not complete because many records or information are unavailable. This information will help people who are looking up information about their family. In this discussion we will explore the concept of legitimate News - and why so many people view the Fifth Estate with a cynical eye. We will also discuss why Journalists, whose essential role is to scrutinize relevant topics/issues on behalf of the public, are under increasingly intense scrutiny by the public. We’ll explore the evolution of Propaganda, and its seductive twin the Conspiracy Theory - and how even intelligent, educated people can be manipulated by quasi-rational, strategic rhetoric. Regarding the Internet and accusations of it’s lowering the Journalistic bar: this will NOT be a public flogging of technology. A too-often-repeated sneer in Reporter circles is: “The Internet may be the first truly democratic media, but democracy’s flaw is that every idiot gets to vote.” The journalist – as an agent for the Public – perceives of an issue for its potential relevance, followed up with objective validation of that perception through investigation and analysis. ESSEX CAMPUSExperience Uganda—Helping Children and Overcoming Poverty Save African Child Uganda (SACU) was founded in 2010 by a retired Canadian teacher, Geri Sutts, when she met a young Ugandan, Ivan Nersa, who longed to help the children in his village, Buwundo. Since then SACU has saved many children from slavery, starvation, illness and child abuse. In 2014, SACU’s first shelter for homeless children was built. A second shelter was later added, with the help from an anonymous donor. In this course you will have the opportunity to see and hear how SACU cares for 160 children daily and educates them with the help of seven Essex County residents. Another life-giving project for girls was founded by a Ugandan teacher-counsellor, who saw education as a way to empower girls.   • 28. ESSEX CAMPUSVanished Villages I: Exploring Part of Our Region We are all part of history because we all were born somewhere, and we shall end somewhere. Along the way we will enjoy families, careers and life. Yet, sometimes where we “came from” no longer exists or exists only as a memory for a few. It is possible to identify in excess of 200 villages in Essex and Kent Counties that once existed, offered life and a future but, for many reasons they vanished. In this course we shall visit and talk about some of those now, often, vanished villages. We will both explore our region and explore some of the reasons why some vanished or have been reduced to many fewer homes and businesses. Places like Edgars, Barretville, Elford, Bulgetown and Klondyke, Albertville and Union. Places with a past of which the memories still remain. ESSEX CAMPUSWater Quality Issues in Essex County Streams and rivers in Essex County experience some of the highest levels of nutrient and E.coli concentrations in the province, ranking our streams at the bottom of the grade scale. On a provincial scaling system, the average score is a ‘C’, while Essex streams receive ‘D’s and ‘F’s. In our backyard the shores of Lake St. Clair and Lake Erie experience annual harmful algal blooms as a result of excess nutrients from our streams and those through the Lake Erie watershed. In this course you will learn about ERCA’s water quality monitoring program, the issues facing our streams, and the actions that need to be taken to address them.   • 32. HARROW CAMPUSAntique Ladies’ Undergarments & My Mother’s Trousseau In this two-part course we shall explore history from a very personal and even intimate manner. Two members of Questers (South Shore Seekers Chapter) will take you on a most fascinating exploration of classic vintage women's undergarments. Quester Member Valerie, and the lingerie collection she will display and discuss, belongs to the Park House Museum in Amherstburg and dates from the forming of Fort Malden in 1796 until the end of WWII in 1945. Also, we will discover what a Mother created almost a century ago as her trousseau for her anticipated married life. Giovanna, the second Questers Member, and her sister Maria will share their mother’s trousseau. Born in 1910 and married in 1936, their mother did what many young girls did in those days— she started filling her hope chest in preparation for the day she would marry. Her family owned a large loom and she began to weave cloth that she later made into bath towels, table cloths etc. She bought fabric for sheets, pillow shams and underwear and started embroidering beautiful designs on them. They still have the sheets and shams (she probably used them only a couple of times during her first week of marriage) but alas, the underwear (bloomer type) has long disappeared as when Maria was a teen she recut them to make summer tops. Maria and Giovanna, were both born in Sicily and emigrated to Canada with their mother and two brothers in 1951 at the age of 7 and 9 respectively. Giovanna went to the University of Toronto majoring in English and French then taught both at the high school and elementary level. Maria graduated from the Special Art Program at Central Tech in Toronto. She worked in the art departments of several large companies. They are now both retired (one widowed, one divorced), live together and run a unique B & B in Kingsville.

  • 35. HARROW CAMPUS Mission Work in Haiti This course will share experiences of the presenters in travelling to a third world country and engulfing themselves in the culture of Haiti. Learn about their encounters with ways of life there including the schools, Christianity, foods and transportation. Hear about the challenges that were faced while delivering medical clinics in the impoverished villages in a country that has few resources. They transported hockey bags filled with medical supplies, milk bag mats, and donations from Harrow and Colchester’s Anglican churches. Severe and wide ranging, this fury destroyed twelve ships with all hands lost, in four of the five Great Lakes (although Huron was the hardest hit) and did serious damage to many more vessels. Learn about these ships and hear some unusual tales about sailors who struggled with this epic upheaval. Stories include the case of a body from one lost ship wearing the lifejacket from another lost ship, the sailor who attended his own funeral, information about many of the individual sailors lost in the storm, PLUS find out about the modern discoveries of many of these tragic wrecks. Bring your data enabled smartphone if you have one, and/or a handheld GPS. If you don’t have either, it’s ok! You can still participate and have fun! LASALLE CAMPUSIslam in Focus: One Theme, Four Topics This series of lectures is so structured as to inform course participants about the growth of Islam in Western Europe and Canada in the last half-a-century or so. There was little mention of Muslims in Canada during the Centennial year (1967) but according to Canada's 2011 National Household Survey, there were 1,053,945 Muslims in Canada, or about 3.2% of the population, making Islam the second largest religion in the country after Christianity. Islam has been present in continental Europe since the 8th century – controlling a region in Spain, known as Al-Andulus between 711 and 1492. The growth of Islam in Western Europe since WWII has been phenomenal. There are many causes, including needed workforce, refugee and asylum admittances and conversions, etc. We will look at the Muslim demographics and institutions in a number of countries of Western Europe, including Sweden, Germany, France, the U.K., the Netherlands, Belgium, etc... The presence of Islam in India goes back to the early 8th century. Ontario is home to over 80 craft breweries, but Essex County is home to only one remarkable rib house and that is Ray’s Rib House in South Leamington. Ray’s Rib House is considered one of North America’s finest rib houses according to noted spare rib connoisseur, Dr. Robert Agranoff of Indiana University who travelled to Leamington just for the ribs. Agranoff declared Ray Youssef’s spareribs to be “the finest he had ever tasted”. This course will introduce you to styles and types of crafted beer including a plentiful array of craft beers to be “tasted”. The course will focus upon the Ontario Consumer Protection Act and the rights consumers have to cancel or amend certain contracts.   • 65. TECUMSEH CAMPUSFaith, Politics & Science in Greater Middle East This course will review 1400 years of Muslims lands quest to find a balance between faith and worldly life. Religious elements, which were on fringes of Muslim societies, were empowered and brought to center stage which ironically resulted in present unrest in Middle East. From early centuries, development of Islamic law and quest for knowledge created an enhanced culture of learning. Most early scholars came from Central Asia. They were inheritors of Buddhist techniques of debate and endowed Viharas (Buddhist monasteries). Muslims adopted these techniques and established Madrassas (the colleges). These cultural practices were transposed to Europe during the Crusades thereby stimulating a scientific culture. In the Muslim world traditional Islamic forces, most notably those led by 12th century Persian philosopher Al-Ghazali put a stop to this Golden Age. Further devastation was caused by Mongols invasion in 13th century. Muslims recovered from this setback and witnessed a period of territorial expansion from 1500 to 1750 but remained technologically stagnated. Muslim societies failed to defend themselves. European empires subjugated every Muslim country and drew political borders at their will ignoring ethnic and sectarian realities which eventually caused conflict and displacement. One reaction to the European challenge was in the form of the Islamic Modernism Movements of 18th & 19th centuries which encouraged adoption of Western education. Promoters of this enlightenment led and won freedom from colonial powers. Explore the encyclopedic collection spawning ancient Egyptian and European works, to contemporary art. As an introduction to our day trip you will attend an informative 2-hour session which will include American artists Copley, Cole and Church, as well as the painting by J. M. Whistler that was the subject of a court battle. In the second session all participants will take a bus from Windsor to the Detroit Institute of Art. During our visit you will also get to see the DIA-sponsored special exhibition which celebrates the Mexican tradition of “Ofrendas”, altars that commemorates lost loved ones. The literature of Homer, the plays of Sophocles and the writings of Hesiod introduced us to the families whose characters and exploits ultimately propelled the myths into present day. Much of Greek art depicts these legends. Later European artists portrayed these same stories in their paintings and sculptures.
