Students are asked to research the history of an authentic New Mexican dish including its creation, adaptations, uses in celebrations or other contexts, and the significance of its individual ingredients. They must write a two-page reflection and create a short presentation, which can be a PowerPoint or photos, sharing what they learned about the cultural and historical background of the dish as well as photos from cooking or examining it. Access to a full kitchen is not required so uncooked dishes can also be explored.
