This is a Ugandan Rolex and the chapati making process can vary with country or individual. Let us simply refer to this recipe as My Edition 'Lynn Rolex'. Enjoy. Let me know how it goes.
2. ROLEX
• Rolex is a popular Ugandan food item made by egg omelette wrapped in a
chapati.
• It is quick to prepare
• Can be eaten anytime of the day (Breakfast, Lunch or diner)
• The name Rolex is derived from the method of preparation; the chapati and
the omelette rolled together (‘rolled eggs’)

3. STEP 1: PREPARE THE CHAPATIS
Ingredients
• 1 large packet of all purpose Flour
• ½ Litre Oil (approximately)
• 1 finely grated carrots
• 1 finely grated onions
• 2 finely Grated green Paper
• 2 cups of luke-warm water
• 4 tea spoons of salt to taste
• 2 tea spoons of sugar
This recipe will make 10 Chapatis

4. CHAPATI: INSTRUCTIONS
• In a large bowl, add flour together with carrots, onions, green pepper and 6
tea spoons of oil. Adding a little bit of water at a time, mix the ingredients
together to form dough. Knead the dough for 10 minutes or until it does not
stick to your hands. The secret to really soft Chapatis lies in the kneading. The
dough must be smooth and just the right softness.

5. CHAPATI: INSTRUCTIONS
• Divide the dough into equal portions, roughly the size of a golf ball. Roll
between your palms, applying a gentle pressure, till the balls are smooth and
without cracks. Once completed, lightly brush each piece of dough with oil
and then sprinkle a pinch of flour on top.

6. CHAPATI: INSTRUCTIONS
• Sprinkle flour over the bench where you will be rolling the chapattis out. Use
your rolling pin to push the dough into round flat circles about 5 inches wide.
Flip the dough as you roll and make sure you add flour if it is sticking to the
bench or the rolling pin.

7. CHAPATI: INSTRUCTIONS
• Heat a pan on a medium flame and put one tablespoon of oil in the pan. Put the rolled out Chapati on it to
cook. Use your hands to stretch the chapatti to the width of the pan so that the chapatti is as thin as
possible. Take a spatula Slowly press down on the chapati and then flip it.
• Note: The Chapati is ready for its first flip when you begin to see raised bumps on its surface. Use a spatula to
turn it on to its other side.

8. CHAPATI: INSTRUCTIONS
• Remove from the pan when both sides appear golden in colour.
• Try to keep the chapatis warm to maintain the softness.

9. EGGS
• Next how to make the omelette.
• I am sure you have made this several times
before.
• The only difference here is that the omelette
contains a great deal of vegetables.

10. INGREDIENTS
• All finely chopped
• 1 red and 1 yellow paprika
• 1 Onion
• 2 Green peppers
• 2 Carrots
• ¼ Cabbage
• Add Salt to taste
The quantity depends on how many chapatis you like make.
Approximately 2eggs 1 chapati

11. INSTRUCTIONS• In a bowl mix the appropriate number
of eggs with the ingredients
(chopped vegetables).
Note: The number of eggs depends on
how many chapatis you have.
Approximately 1 chapati for 2 eggs.
• To a heated pan add a tea spoon of
oil and add egg *equivalent 2 eggs*
• Turn fry with spatula to make a whole
omelette avoiding crumbling it.
• Wait when ready and place the
chapati on top and roll together to
make a Rolex.
• Repeat the process for all the
chapatis
• Serve while cut through the middle or
even as a whole.
