Cut the potatoes to thin slices• Roughly thesize of a 1Euro coin(and a bittaller)
Mix onions, potatoes and oil• And add 6tablespoonsof virgin oliveoil into aglass bowl• Stir well andmake sure allthe thinpotatoes arecovered in oil
Microwave it!• Microwave full power for 20 minutes, stirringevery 4 minutes or until the potatoes are cooked• Cover the bowl with a plastic plate or somethingelse as it will help to retain the moisture andcook the potatoes faster• Check around the 15thmin just in case to see ifthe potatoes are cooked. If you put lesspotatoes/onions, it will cook faster• Try the potatoes, they should be soft and will nottaste of raw potatoes. Try a big piece, not asmall one.
The potatoes & onions reduced insize after cooking• Thepotatoesand onionsare readyto be mixedwith theeggs
Whisk the eggs & add them to thepotatoes. Add some salt to taste.
Make the Tortilla!!• Heat up 2 tablespoons of olive oil on a large non-stickfrying pan (medium fire)• Make sure that the pan is non-stick and not scratched• Make sure that oil covers the whole surface of the panbefore you add the mix• Add the mix and cook for 4/6 mins to make• Move the pan to make sure that the tortilla does not stickto the bottom
Turning the Tortilla• Get a plate that fits nicely in the frying pan• On the top of a safe area (i.e. the sink), hold the plate with one handand rotate the pan 180 degrees, so that the plate faces down• Put the tortilla back on the frying pan. Be careful as the other side isstill runny.
Cook the other side• 4/6 minutes, medium fire• Make a cut with a knife and make sure that it is cookedproperly (i.e. egg is not runny)• With the help of a wooden spoon, make sure that thetortilla takes a round shape• If the egg is not cooked properly, or the tortilla hasn’t gotthat nice brown colour, you can turn it and cook it for abit longer
Leave to cool down for a bit and it isReady to eat!
Remarks• If you find it difficult to turn the tortilla over withoutmaking a mess, try to grill it a bit to cook the egg andmake it more solid. However you must still turn it overand cook it as otherwise it will look like a quiche insteadof a tortilla (see next slide)• Keep moving the pan so that the tortilla does not stick tothe bottom, but it is better to have good frying pan• The frying pan should be non-stick• Instead of using the microwave, you could shallow frythe potatoes/onions in olive oil. I like the taste of thepotatoes the microwave way, whereas the fried way thepotatoes have more olive flavour as they suck up moreoil, but it depends on how you fry them.
