2. Ingredients:
½ kg soybeans
5 liters water
white sugar according to taste preference
Salt to taste
Vanilla
Makes 5 liters or 20 glasses
Soymilk
3. Procedure:
1. Wash and soak soybeans at least 6 hours or overnight
2. Remove the hull or skin by pressing lightly on the seeds under water
3. Drain soybeans
4. Heat water to 65ºC to 70ºC
5. Put 1 cut soybeans in a blender and add 1 cup hot water
6. Blend until pulp is fine
7. Pour into pot with a cloth strainer. Repeat process until all soybeans
have been pureed.
8. Put excess hot water on the pulp to further extract the remaining
milk.
9. Squeeze as much milk from the pulp.
10. Set the milk on medium heat with constant stirring until milk boils
11. Simmer milk until cooked and the beany paste is gone.
12. Add sugar, salt & vanilla to taste
13. Serve hot or cold
Soymilk
5. Procedure:
1. Prepare soybeans as in the preparation of soymilk up to filtration step.
2. Heat soymilk to boil for 15 minutes. Stir from time to time
3. Allow to cool to 80ºC
4. Pour calcium sulfate slowly into the hot soymilk, while gently stirring
the soymilk and allow the mixture to stand 15-20 minutes
5. Remove whey carefully.
6. Transfer into the molder lined with cheese cloth until full and allow to
drain. Wrap with cheesecloth.
7. Put weight on top to press the curd.
8. Cut the curd into cubes and place in cold water.
9. Store in refrigerator
Tokwa
Makes 400 grams of tokwa
6. Ingredients:
3 cups soybean pulp
3 gloves garlic
2 pcs onion
1 stalk leeks
1 stalk celery
1 tbsp margarine (optional)
Soy sauce
Pepper
3 pcs egg
2 red bell pepper
2 green bell pepper
Salt to taste
1 cup flour
½ liter cooking oil for frying
Soy burger
Procedure:
Mix all ingredients except cooking oil
Form into patties
Fry until golden brown
Makes 15-20 pieces
8. Taho
Procedure:
1. Mix soymilk and gulaman and
bring to boil with constant stirring
under medium heat.
2. Continue cooking at low flame
until slightly thick in consistency.
3. Pour into cup or mold and allow
to set
4. Once set, add sago and sugar
syrup.
Sugar syrup:
1. Boil 1 cup water and 200 grams
brown sugar for 10 minutes.
2. Add vanilla, pandan or other
flavors
