1. Mathanga Erussery (Pumpkin & red gram)
Ingredients
250 gms Mathanga/ Pumpkin Peeled and Diced
100 gms Brown Peas
100 gms Coconut grated
20 gms Fresh Green chili
3 gms Cumin seeds
75 gms Peeled Shallots
3 gms Turmeric powder
20 gms Sliced coconut
15 gms Coconut oil
3 gms Mustard seeds
A Sprig of Curry leaf
5 gms Dry Red Chili
Salt to Taste
Procedure
Cook Brown Peas in a pressure cooker with enough water and salt.
Cook pumpkin cubes in a pan with water.
Grind together grated coconut, green chilli, cumin seed, shallots and salt in a
grinder.
Add together cooked Brown Peas , pumpkin and the grinded mixture in a pan , mix
well.
2. Add enough water to make it to curry consistency and boil for a minute.
Heat oil in a pan, splutter mustard seeds, add curry leaf, sliced coconut, and dry
red chili. Fry it and add to the cooked curry.
Mathanga or Pumpkin erussery is ready .
