Food & Beverage Director
As F&B Director for the two separate properties my primary purpose is to assure all food
and beverage operations and Member services are coordinated to exceed Member
expectations, while achieving the Club's revenue and profit objectives. The benchmarks for
a successful F&B Director are: growth in Member usage and food and beverage revenues;
reduction in Member attrition; the maintenance of all quality standards for service,
production, cleanliness, and safety; employee relations and staff development; all
measured by growth in Net Revenues from Operations. Also responsible for the direction,
development, and training of all service personnel, in order to maintain a high level of
service as well as ensure that the Club adheres to the standards that have been set forth
by ClubCorp.
In addition to these standard Club Corp responsibilities I have also done extensive
remodeling and repair work at both locations. For private events at both locations I was in
attendence for all functions to either assist chef with all food preparation or when we had
an event at both locations on the same date I served as chef for one while he took care of
the other kitchen.
The Village Beach Club

Tended Bar 3 days a week. Worked on kitchen line 2 days. Assissted Executive Chef with
daily kitchen supervision, training, ordering, developing daily food specials and execution
of standard menu items.

Assistant Food and Beverage Director
As assistant to food and beverage director my responsibilities included interviewing and
hiring staff, scheduling employees, maintaining standards and enforcing policies as set
forth by F&B director, discipline problem employees, setting banquet and restaurant
functions, tend bar, wait tables, host restaurant, weekly ordering of beer, wine, liquor,
soda and restaurant supplies, monthly inventory, implementing inventory controls,
marketing to increase restaurant traffic, communicate and coordinate with all departments
to repair and maintain restaurant, banquet and deck bar facilities, provide support to
outside vendors to update and maintain web sites, schedule entertainment for both bars.
As “Manager on Duty” most evenings it was also my responsibility to handle any issues
that may arise in any area of hotel.

Assisted in all phases of outside catering. Including cooking, delivery and set-up of
equipment and food, butlering food and bartending,

As company owner I was responsible to schedule and meet with clients on site to discuss
and evaluate needs and desires. Formulate designs and options to satisfy clients needs.
Generate proposals and budgets based on project requirements. Negotiate contract terms
and agree to costs and schedule. Obtain all necessary permits. Order materials and
schedule employees and sub-contractors. Directly supervise multiple projects to ensure
work performed meets contractual agreements, local and state building codes, as well as
company standards. Address any questions or changes client may have during construction
process and offer cost-effective solutions. Provide project updates to non resident clients
via phone and E-mail including photographs of progress.
During my career in the construction industry I have extensive experience in the following
areas: General structural carpentry, Plumbing, Electrical, Siding, Roofing, Floor finishes
including ceramic tile, carpet, hardwood, laminate and vinyl, Window and door
replacement, Water damage diagnosis and repair, I have a working knowledge of HVAC
system repair and replacement. In addition to private and rental homeowners, I have
performed general maintenance and repairs for real estate management companies.
