Cheese is a food derived from milk that is produced in
a wide range of flavors, textures, and forms by
coagulation of the milk protein. It is produced by
coagulation of casein.
3. HISTORY OF CHEESE
The actual time and place of the origin of
cheese and cheesemaking is unknown.
The practice is closely related to the
domestication of milk producing
animals; primarily sheep, which began
8-10,000 years ago.
The art of cheesemaking is referred to in
ancient Greek mythology .
Cheese may have been discovered
accidentally by the practice of storing
milk in containers made from the
stomachs of animals. Rennet, an
enzyme found in a stomach of
ruminant animals, would cause the
milk to coagulate, separating into
curds and whey. This is cheese making
was invented.

• ROQUEFORT CHEESE - It is a
kind of blue cheese which comes
from the south of France. It is made
from sheep's milk. French laws
about AOC say that only cheese
from the region of Roquefort -sur-
Soulzon may be called Roquefort
cheese.
• FETA CHEESE- - Feta is
a brined curd white cheese
made in Greece from sheep's
milk, or from a mixture of
sheep and goat's milk.
5. CAMEMBERT CHEESE
- Camembert is a soft,
creamy, surface-ripened cow's
milk cheese. It was first made
in the late 18th century at
Camembert, Normandy, in
northern France.
MOZZARELLA -
Mozzarella is a
traditionally southern
Italian dairy product made
from Italian buffalo's milk
by the pasta filata method.
