INTRODUCTION
• Mushrooms are natures’s hidden treasures of
nutrition . Many people like them for their
satisfying meaty taste and their versatility.
• For thousand of years ,mushrooms have been
used in eastern medicine for their various
health benefits.
• Mushroom are good source of riboflavin or
vitamin B2 , pantothenic acid or vitamin B5 and
niacin or vitamin B3.
•Mushrooms provide a rich addition
to the diet in the form of proteins,
carbohydrates, fibre,valuable salt
and vitamins.
•used as a functional food as
nutrient suppliment to enhance the
immunity in the form of tablets.
•Due to low starch content and low
cholesterol it should be consumed
by diabetic and heart patient.
• Mushroom polysaccharide content is used as anti-
cancer drug and also used to treat HIV effectively.
• The biologically active compounds from
mushrooms posses anti-fungal ,anti-bacterial
,anti-oxidant and anti-viral properties.
• Mushroom cultivation can be a good source of
income for housewives, retired person ,
unemployed person and even students because it
is an indoor activity.

NUTRITIVE VALUE OF
MUSHROOM
• Mushrooms are the richest source of vegetable
protein.
• The protein content varies from 1.1-4.98% in which
is much higher than pulses,vegetables and fruits.
• All the essential amino acids including
lysin(550mg/gm) are present in much higher
amount .
• Mushroom content folic acid.
• Mushroom contain vitamins like B,C,D and K.
• Mushroom contain sufficent quantities of mineral
elements such as Na,K,Ca,P and Fe.
• In mushrooms, the fat content is very low as
compared to carbohydrates and proteins.
• It is affected by numerous factors such as
species,stage of development and environmental
conditions.
• Edible mushroom have high lipid content.
• Protein-most mushroom have a high protein
content,usually around 20-30%by dry weight.
• Fiber-helps lower cholesterol and is important for the
digestive system.
• Niacin and other important B vitamins- as certain B
vitamins are found in animal tissue but not in
plants,this can be another good supplement for
vegetarians.
• Vitamin D-essential for the absorption of calcium.
• Polysaccharides – complex carbohydrate that
stimulates the immune system.
• Enzyme inhibiting activity – mushroom can inhibit the
production of certain enzymes such as aromatase ,
which the body uses to make estrogen . This could
reduce the risk of breast cancer.
• Triterpenes- steroid like molecules that inhibit
histamine release and have anti-inflammatory property
.
• Potassium- An extremely important mineral that
regulates blood pressure and keeps cells functioning
properly. A large protobello mushroom is said to have
more potassium than a banana.
• Copper- aids in helping the body absorb oxygen and
create red blood cells.
• Selenium- an antioxidant that helps neutalize free
radicals,thus preventing cell damage and reducing the
risk of cancer and other damage.
• Low levels of fat,calories and sodium.

• Mushroom are suitable for people suffering from
high blood pressure and it is good for heart
patient.
• The diabetic patient choose mushroom as an ideal
food due to its low calorific value,no starch and
little fat and sugar
• Mushroom have anti-aging property.
• Mushroom are capable of strengthening the
immune system and activate all kind of immune
cells.

  • 2. INTRODUCTION • Mushrooms are natures’s hidden treasures of nutrition . Many people like them for their satisfying meaty taste and their versatility. • For thousand of years ,mushrooms have been used in eastern medicine for their various health benefits. • Mushroom are good source of riboflavin or vitamin B2 , pantothenic acid or vitamin B5 and niacin or vitamin B3.
  • 3. •Mushrooms provide a rich addition to the diet in the form of proteins, carbohydrates, fibre,valuable salt and vitamins. •used as a functional food as nutrient suppliment to enhance the immunity in the form of tablets. •Due to low starch content and low cholesterol it should be consumed by diabetic and heart patient.
  • 4. • Mushroom polysaccharide content is used as anti- cancer drug and also used to treat HIV effectively. • The biologically active compounds from mushrooms posses anti-fungal ,anti-bacterial ,anti-oxidant and anti-viral properties. • Mushroom cultivation can be a good source of income for housewives, retired person , unemployed person and even students because it is an indoor activity.

NUTRITIVE VALUE OF MUSHROOM • Mushrooms are the richest source of vegetable protein. • The protein content varies from 1.1-4.98% in which is much higher than pulses,vegetables and fruits. • All the essential amino acids including lysin(550mg/gm) are present in much higher amount . • Mushroom content folic acid.
