3. The Roots of the Issue
• Hunger: Distress attributed to lack of
food; when a person/group suffers from
food insecurity
• Undernutrition (>1800 cal)
• Not just calories
• Malnourishment = UNBALANCED
• Food security: When someone has
accessible and sustainable sources of safe,
nutritious food
• More than enough food is produced + We
have the resources = NOBODY should go
hungry
• Nearly 39.5 million people live in low-
income, low-access areas (a.k.a. FOOD
DESERTS)
• Usually in inner-city, predominantly
nonwhite neighborhoods
• Covid-19 made things even worse (The
Pandemic Intensified Chicago’s Food
Deserts in the South and West Sides)
