The Club is dedicated to serving of The Ruling family of Dubai. It takes care of the
Food requirements of The Royal family i.e.; production and distribution of ready
to eat meals for the same day, event catering for functions and parties hoisted
by the Royal family and the Dubai Govt. It also provides recreation, support
services and facilities like swimming pool, gym, laundry, game court, medical
area etc.
The work in Nad Al Sheba private club is extremely challenging as we are dealing
with no ordinary customers, but The Royal Family itself. Extreme care is required
at each & every step. The first objective of my work at the time of joining was the

Manage Quality and Food Safety teams assigned to carry out random process
monitoring, verifications, traceability checks, internal audits, External audit,
supplier evaluations, CCP's, CAPA's, training, swabs, and microbiological
examinations; and maintaining the quality management system as well as food
safety standards.
Manage the functional goals through the leadership of Technical Department
with a Quality Assurance and Food Safety Management focus – this includes
setting long-term goals, KPIs and processes to ensure effective fulfilment in line
with organizational goals, Advise Senior Management in developing Strategic
Improvement plans and monitor their implementation.
The duties and responsibilities include Quality inspection during receiving of the
raw materials, ensuring proper storage of the raw materials, follow up of all the
preparation and cooking activities by monitoring all the CCP’s, follow up of the
hot holding & cold holding, follow up of packing and distribution of the food,
ensuring proper cleaning and sanitation inside the club, personal hygiene of all
the food handlers, conducting Research and Development activities for
enhancing the system like making useful changes in the Manual, create new
procedures like Job description, new procedure manual etc.
Contracting with third partner companies for consultation, training, Pest
control, sanitizing and disinfecting chemical, environmental service company,
Calibration Company, Approved food supplier, certification company etc.
Identifying the high risk areas within the kitchen, put measures to control it and
making risk assessment report.
Investigate all kinds of client complaints on quality or food safety aspects,
including but not limited to foreign objects, packaging, appearance or
adherence to specifications, and prepare a preventive action plan for the
respective division to ensure compliance.
Provide full support by taking affirmative actions on recommendations made
to working processes, work behaviors and conditions to ensure that all
employees have a safe and healthy working environment.
Ensures the company is meeting the Dubai Municipality and Public Health
Department regulations and liaise with regulatory agencies on behalf of the
company and ensure ongoing compliance with the established standards.
