2. Descrizione
Il settore turistico è uno dei comparti in cui le variabili psicografiche nell'ambito della segmentazione
del mercato hanno maggior peso perché esprimono una specifica filosofia della vacanza: le persone
attente alla salvaguardia dell'ambiente, ad esempio, sono attratte dal turismo verde. Infatti negli
ultimi anni il turismo di massa ha sconvolto lo stesso ambiente che veneriamo e quindi è stato
necessario improntare la propria vacanza allo sviluppo sostenibile che ruota intorno a tre punti
fondamentali: la salvaguardia dell'ambiente, delle persone e dell'economia.
Detto ciò le imprese turistiche ricettive si sono dovute adattare a questo nuovo modo di fare turismo
per tutelare ciò che ci circonda.
Sono riuscite a sviluppare degli schemi verdi e delle politiche aziendali sostenibili dando vita ai
cosiddetti eco-lodges, ovvero delle imprese ricettive ecologiche tra le quali si annoverano gli
eco-hotel, gli ecoresort, i campeggi e gli agriturismi.
Per effettuare le analisi del caso, la mia scelta cade sugli eco-hotel completamenti diversi dalla
comune struttura ricettiva che siamo abituati a vedere, ma che rispettano le linee guida ambientali
proposte negli ultimi anni a cura del nostro pianeta.
In questo modo potremo vedere realmente come la struttura ricettiva potrà essere capace di offrire un
servizio completo pur rispettando il nostro amatissimo ambiente.
Il nome della mia struttura ricettiva sarà My planet eco-hotel situata a Ragalna, in Sicilia.
My planet eco-hotel
My planet eco-hotel è uno dei primissimi hotel eco-sostenibili all’avanguardia qui in Sicilia. Il nostro
obiettivo principale è la soddisfazione massima dell’eco-turista.
I nostri clienti sono innanzitutto alla ricerca di una struttura che rispetti il paesaggio. Ogni aspetto,
qui, lo mette in evidenza. A partire dalla sua bio-architettura: esternamente, si integra perfettamente
con la morfologia del territorio; internamente, utilizza materiali naturali provenienti dalla zona. Le
risorse idriche ed energetiche sono garantite da una centrale autonoma che produce elettricità da
fonti rinnovabili (pannelli fotovoltaici, biomasse) e da un sistema di raccolta dell'acqua piovana. Un
ulteriore obiettivo è quello di produrre meno rifiuti possibili seguendo anche la raccolta differenziata.
Il nostro staff è altamente qualificato per lo sviluppo sostenibile. My planet eco-hotel offre ai clienti
anche la ristorazione: i nostri clienti potranno assaggiare le prelibatezze della nostra amata Sicilia. I
prodotti utilizzati sono principalmente alimenti bio,freschi e a km 0 acquistati in loco. Inoltre, per chi
vuole rilassarsi completamente, è disponibile un centro benessere, che saprà regalarti un soggiorno
nel benessere assoluto.
Le camere sono sia comuni e sia inusuali come le cupole all’aria aperta curate con prodotti biologici.
La nostra mission è, quindi, quella di regalare al cliente nuove esperienze, nuovi modi di vivere e di
pensare, approcciandosi alla natura circostante e vivendo un connubio speciale pur garantendo il
rispetto totale della nostra Terra!
Che cos’è la C.O.A?
Per gestire più efficacemente le varie produzioni, utilizziamo la C.O.A. o C.O.A.N. (contabilità
analitica).
La contabilità analitica permette di rilevare i costi e ricavi parziali su un singolo prodotto o singoli
processi produttivi, quindi si riferisce ai fatti interni di gestione.
La C.O.A. serve per ottimizzare il profitto, stabilire, ad esempio i costi, controllare l’efficienza
aziendale, determinare il prezzo di vendita dei beni o dei servizi da offrire e quindi alla fine
programmare al meglio l'attività aziendale.
Lo scopo principale della contabilità analitica è quello di rilevare i ricavi e i costi di gestione nonché i
flussi di finanziamento valutando:
● l’efficienza, cioè l’utilizzo ottimale delle risorse inteso come rapporto tra risorse impiegate e
risultati per evitare sprechi o l’utilizzo di risorse non necessarie;

3. ● l’efficacia, cioè la capacità dell’azienda di conseguire gli obiettivi prestabiliti.
Attraverso la contabilità analitica si ottengono i risultati economici servendosi del:
● direct costing;
● full costing.
Cos’è il direct costing?
Il direct costing è un metodo per il calcolo dei costi che attribuisce ad ogni centro di produzione i costi
variabili diretti e fissi specifici. I costi indiretti, in questo caso, non vengono ripartiti tra i centri di
produzione.
Dalla sottrazione tra i ricavi di vendita e i costi variabili si ottiene il margine di contribuzione di I
livello; a quest’ultimo sottraiamo i costi fissi specifici ed otteniamo il margine di contribuzione di II
livello a cui sottraiamo i costi fissi comuni e infine, raggiungiamo il risultato economico.
Cos’è il full costing?
Il full costing è un metodo utilizzato per attribuire ad ogni centro di costo i suoi costi diretti e i costi
indiretti direttamente imputabili.
Ciò avviene grazie al riparto semplice diretto tra i costi indiretti e qualsiasi base di riferimento
utilizzata. Di solito si prende in considerazione il costo primo, ovvero la somma dei costi diretti, ma
ciò non esclude l’utilizzo di altre basi. Da ciò si ottiene il coefficiente di riparto da moltiplicare ad ogni
base di riferimento.
Il metodo del direct costing è più oggettivo, perché si basa su dati oggettivi ed è usato anche per
comprendere quale centro è meno produttivo; invece il full costing è un metodo più completo, ma
anche soggettivo considerando che si possono usare più basi e il risultato economico può variare.
La nostra impresa utilizzerà il direct costing e il full costing con il costo primo come base di
riferimento per effettuare delle previsioni sull’anno in corso.
Dati
Nel dettaglio My planet eco-hotel possiede 240 posti letto, 130 posti per il ristorante e 40 posti per il
centro benessere.
Si prevede:
● il grado di occupazione del 55% per le camere;
● il grado di occupazione del 45% per il ristorante;
● il grado di occupazione del 35% per il centro benessere.
Inoltre My planet eco-hotel è stato chiuso dal 09/03 al 18/05 a causa dell’emergenza sanitaria in
corso. Ciò vuol dire che i giorni di apertura non sono più 366, ma 297 e i ricavi di vendita, i costi
variabili e i costi diretti per il personale sono stati adeguati a ciò. I costi che non variano sono i costi
fissi, che l’impresa ricettiva dovrà sostenere comunque.
Per le camere si prevedono:
1. costi diretti lordi personale per €400.000;
2. costi diretti materie prime per €480.000;
3. costi servizi vari per € 333.000;
4. costi fissi specifici per €770.890.
Sapendo che il prezzo unitario è 85, si possono ottenere i ricavi.
L’operazione è:
240 posti letto x 297 giorni di apertura= 71.280 capacità ricettiva.
71.280 x 55%= 39.204 capacità ricettiva effettiva prevista
39.204 x 85 = €3.332.340 ricavi totali

1. costi diretti lordi personale per €300.000;
2. costi materie prime per €365.890;
3. servizi per €250.000
4. costi fissi per €490.990.
Sapendo che il prezzo unitario è 35, si possono ottenere i ricavi.
130 posti x 297 giorni di apertura= 38.610 capacità di accogliere i turisti
38.610 x 45% = 17.374 capacità effettiva prevista
17.374 x 35= €608.107 ricavi totali
Per il centro benessere si prevedono:
1. costi diretti lordi per il personale per €52.800;
2. costi materie prime per €45.000;
3. costi servizi per €50.000;
4. costi fissi specifici per €45.000.
Otteniamo i ricavi totali :
40 posti x 297 giorni di apertura= 11.880 capacità di accoglienza
11.880 x 35% = 4.158 capacità effettiva prevista
4.158 x 30= €124.740 ricavi totali
I costi fissi comuni di vendita e marketing ammontano a 130.000, mentre i costi fissi comuni di
amministrazione ammontano a 220.000.

Il risultato economico risulta essere un utile, quindi i ricavi sono riusciti a coprire i costi.
Nel dettaglio, però, possiamo notare che per le produzioni "ristorante" e "centro benessere" sono
previste ingenti perdite, tanto da determinare un risultato negativo sia nel direct costing che nel full
costing. Infatti avendo utilizzato il costo primo come base di riferimento nel full costing, si ottiene il
medesimo risultato economico.
Ciò è dovuto all’emergenza sanitaria che stiamo vivendo, la quale ha causato un calo delle presenze,
non solo nelle camere, ma anche al ristorante e al centro benessere
Le nostre previsioni sono date considerando che da maggio a settembre siamo in alta stagione e le
presenze potrebbero aumentare, ma non come l’anno precedente: i turisti, in questo periodo,
prestano più attenzione a non contrarre il virus e quindi evitano i luoghi affollati e chiusi. In effetti, il
nostro centro benessere e il nostro ristorante sono luoghi discretamente piccoli, al chiuso e sono stati
effettuati vari cambiamenti per distanziare i posti, comportando così minor affluenza e minor posti
disponibili. Inoltre, i turisti verdi tendono a prediligere i pasti fuori, all'aperto e in contatto con la
natura a discapito del nostro ristorante.
In secondo luogo in pochi viaggeranno a causa del timore che hanno verso il virus, così variabile e
soprattutto a causa della crisi economica che da qui a breve dovremo affrontare.
Per questo, secondo i dati statistici odierni, il centro benessere non è molto gettonato, in questo
periodo, visto che i nostri clienti sono concentrati sulla visita dei luoghi qui presenti e a fare, quindi,
un viaggio veloce nel week-end, giusto per rompere la quotidianità e rilassarsi.
Pochi saranno, probabilmente, i ricavi, ma alti saranno i costi da sostenere: a partire dai prodotti
biologici sia per la pulizia delle camere, del ristorante e del centro benessere fino alla sanificazione
degli ambienti da svolgere in modo abituale per garantire la sicurezza a chi ci sceglie.
Per quanto concerne le soluzioni a ciò, è necessario un forte cambiamento del ristorante,
predisponendo anche tavoli all'esterno e capire al meglio se il centro di produzione centro benessere
può essere davvero valido e fruttuoso o è necessario apportare cambiamenti radicali.

What is tourism?
“Tourism is a collection of activities, services and industries which deliver a travel experience comprising
transportation, accommodation, eating and drinking establishments, retail shops, entertainment businesses
and hospitality services provided for individuals or groups travelling away from home at least one day.”
Nowadays, tourism is the branch of the global economy with the most vigorous growth. There are
several reasons such as: people earn more than before, they have more paid holiday and leisure time,
travelling has become cheaper and easier, the population is getting older and have more time when
they retire, there is a greater variety of places to choose from. The Internet plays a major role as

7. people can book their trips on line independently or through Travel Agent or Tour Operator. People
take break to refresh and relax from stressful routine life or travel for some and psychological needs.
The various purposes lead to different forms of tourism. One of the most important is Green tourism.
What is green tourism?
Green tourism is a type of tourism which involves visiting natural areas while minimizing
environmental impacts. In this line, green tourism has been used interchangeably with such concepts
as ecotourism, nature tourism and rural tourism. This aim is to conserve natural resources, protect
plants and wildlife and contribute to the well-being of local communities.
Green tourism has been increasingly promoted over recent years due to growing concerns about
environmental sustainability in many different industries worldwide. Infact, humans are destroying
the environment, because of mass tourism and other factors. Nowadays it is necessary to choose the
right type of tourism to respect our planet.
New and existing companies now offer advice and reviews on the best eco-friendly hotels in any
location.
But, how can we apply these rules to protect our planet?
First, tourists have to choose eco-lodges such as:
● eco-hotels, that have a certification. They use energy-saving lamps and so, they use 100%
clean energy. Moreover it is important that they use flow-reducers in their sinks, green
furniture and solar panels to have hot water;
● campings, that is not just talking about being in contact with nature o recycling. So, these
campsites have several sustainable features. For example, they can be reached without a car.
Also, they offer to their guests bikes. What’s more they only use low energy light bulbs,
reducing energy waste;
● green farms, that offer a contact with the nature and the animals. Tourists can taste a cup of
fresh milk for morning breakfast and so biological products and take part in daily farm
activities.
Second, tourists have to choose low impacts transports. For a green future tourists have to use the
public transport system. Take trams, buses and trains to travel around the city and walk and cycle as
an alternative. The use of motorcycles is fuel efficient, but can only carry a limited number of people
at a time.
Travelling by plane is a very comfortable and safe way to reach places distant. However, it is
incredibly inefficient in terms of fuel.
Of course, there are numerous flaws in each of these eco-methods.
However, this method may take much longer and may not depend on when you are in a hurry.
Finally, the best places where green tourists can go are:
● Sicily, that has got four national parks: Etna Park,
Nebrodi Park, Madonie Park and the Alcantara River Park.

8. These are flanked by numerous green pearls, nature reserves including: the Malabotta Forest,
Zingaro, Island of the Rabbits of Lampedusa and Stagnone Reserve.
Within these natural areas you can find species of plants now disappeared in the rest of
Europe and species of animals in danger of extinction.
● Apulia, where you can admire its national parks such as the
Gargano Park, that is a large park with different areas of interest
such as coastal areas with beaches and marine caves and the park of
Murgia. The management body of the park organizes various
excursions to discover the park, both by bike and on foot, of various
duration and difficulty.
● Norway is a sustainable country that has got the Sustainable Norway 2015 programme. It
increases sustainable development.
Here there are fjords, that are the most famous in the world and some islands like the Lofoten Islands.
Tourists come here to enjoy the beaches, exploring the fishing villages and seeing the wildlife.
● Slovenia is the first sustainable country in the world. Here green tourists can enjoy lots of
landscapes: mountains, sea and lakes such as Lake Jasna, that is an extraordinary beautiful
small alpine lake. The views around the lake are very scenic.
Its capital is called “Europe’s Greenest Capital” because it’s the first city that applies the Green
Scheme for Slovenian Tourism.
The Green Scheme for Slovenian Tourism is a national programme and a certification scheme that
allows the promotion of green action in every places in Slovenia. It is connected to a sustainable
development.

● Bhutan is famous for its model of tourism based on low impact programme.
Travellers, who want to visit Bhutan, have to ask the permission to a tour operator.
● New Zealand has
got different attractions such as the Bay of Islands, that is
a heaven for yachts and sailing boats and Tongariro
National
Park that is a land of beauties and natural wonders.
● Chile, that is rich of natural beauty such as the Atacama
Desert is so dry. It changes its colours in yellow, purple, white
and red. Other places are Patagonia and Easter Island.

● Costa Rica, famous for its large protected areas. It has got breathtaking panoramas like its
volcanoes, waterfalls and beaches.
Here there is a large biodiversity. It is one of the most sustainable countries in the world and it is a
perfect eco-friendly destination. Tourists can live a green trip with some activities such as surfing,
snorkelling, bird watching and nature walks.
● Madagascar, the world’s fourth largest island, is a unique place.
Nine-tenths of its plants aren’t found anywhere else on Earth.
The island is home to a quarter of the world’s primate species,
such as lemur.
Here you can visit the national park Bemaraha. This nature
reserve located near the west coast of Madagascar, characterized
by the presence of tsingy, characteristic limestone rock
formations of karst.

can see it along the route of baobabs. We have to protect this place with eco-friendly
activities. Madagascar suffers because of a mass tourism, that can destroy the environment.
Green tourism is included in responsible tourism, with fair tourism, sustainable tourism and
ecotourism.
What are fair tourism, sustainable tourism and
ecotourism?
Fair tourism is a type of tourism that operates a scheme
that supports tourism sector with accommodation,
transport, attractions, travel agencies…
Sustainable tourism focuses on the environment
conservation, keeping alive the need of the tourist and
the host society. We have to consider three aspects:
● environmental sustainability, that preserves the
environment;
● socio-cultural sustainability, that helps the
local people;
● economic sustainability, that improves the local
economy.
Ecotourism is now defined as “responsible travel to
natural areas that conserves the environment, sustains
the well-being of the local people, and involves
interpretation and education.
Ecotourism is applied by different fields: oceanography management, wildlife management, national
park management, history management that educate the tourists thanks to leaflets, brochures and
the code of tourist.
The Global Code of Ethics for Tourism is a guide key-players for tourism development. Addressed to
governments, the travel industry, communities and tourists alike, it aims to help maximise the
sector’s benefits while minimising its potentially negative impact on the environment, cultural
heritage and societies across the globe.
What are the networks that work
for the responsible tourism?
To protect the nature and the
animals it is born the EUROPARC,
that is the network for Europe’s
natural and cultural heritage. The
EUROPARC Federation, also

12. known as the "Federation of Nature and National Parks of Europe", is an independent,
non-governmental organisation which works with national parks across Europe.
The key aims of the EUROPARC Federation are:
● promote good practice in the management of protected areas;
● facilitate the establishment of new protected areas such as national parks that are large
protected areas in a public land. Their aim is preserving the flora and the fauna. You may
meet the native cultures here that show how they live. Wilderness parks are uncontaminated
areas where we find the wildlife. Finally we have got the nature reserves that are intouched
lands.
Another network is EARTH which aim is to spread the responsible tourism everywhere. It was born in
2008 and it includes nine countries in Europe.
