1. Arrope
Ingredients
3kg of pumpkin
6L of water
1kg de Cal de bolo
(lime which is sold
in a hardware store)
750g of sugar
6kg of black dried
figs
1 sweet potato
1/2 melon
1 kg of pears
Preparation
For doing arrope we clean dried figs taking off the
tails and opening them by de middle to check if they
are good, we put them in water for one night, the
next day we take them out. Then we boil the dried
figs in clean water for three hours. After that, we
add the water we used before to the clean water till
the dried figs are smashed and we get a black stock.
We pass the stock through a strainer because we
2. don’t want the seeds to pass. We put it on the pot
at slow fire. The water evaporates and we only have
the dried figs juice.
To prepare the calabazate (a mix of fruit and sweet
potato treated with lime) we put 9 liters of water in
a pot with the cal de bolo (lime) till the water is
transparent and the cal is left in the bottom. We
take out the water with a saucepan and we put it in
another bowl with the fruit and the melon without
skin and seeds and we cut it in big pieces. We let it
in water for 5 hours and then we clean and add it to
the arrope which is boiling. We let it boil till the fruit
is tender. Finally, we let it cool.
