Carbs are killing human beings just like cigarettes do. But our worldviews have yet to incorporate this picture. And just like with cigarettes, this needs to be discussed on public forums and should be taught to children too.

Carbs? ughh!
1. Hypothesis:
Carbs are not required by human
body in any form.
Human mind may still need them because it
feels “happy” and/or is “addicted” to them
Copyright Akhil Munjal
2. What will we eat then?
• Human body is designed for and meant to run on
proteins and fats as its ONLY source of energy.
• Human beings can eat carbs for a mental “high”
but like any addictive drug if consumed regularly
WILL cause addiction and mental + physical
deterioration
• Proof and explanation of digestion of carbs in the
following slides
3. Types of Carbs
Monosaccharides
•Fructose (Fruits)
Glucose(Beet Root)
•Galactose (Milk)
Disaccharides
•Sucrose (Cane sugar)
•Lactose(Milk)
•Maltose (Beer)
Polysaccharides
•Starch (Potato)
•Dextrin (Bread)
•Cellulose (Indigestible by
humans)
•Pectin (Apples)
•Glycogen
HIGH GI* LOW GI*
*GI explained later on slide 6
4. How body digests carbs?
Conclusion: Dietary Carbs get converted
to SUGAR
Eat sugar or rice or bread or chapatti or
fruits or milk – all carbs are converted
to SUGAR
5. Ok so what?
• So when these sugars are
absorbed by intestines and
released into blood
• Blood sugar level increases
• Body produces insulin to try and
bring down this blood sugar level
• Some carbs take more time and
some take less time – But ALL
carbs INCREASE blood sugar level
Conclusion: All carbs
increase blood sugar and
insulin
6. Correlation between Carb and Blood
sugar level
• This correlation is
measured by Glycemic
index of a carb
• It defines how much
glucose (and
consequently insulin)
level in blood is
increased by that carb
• Check slide 3 to see
which foods have high
GI
HIGH GILOW GI
7. Ok so high blood sugar and insulin. Big
deal?
• More insulin in body? Means
body will start the process of
converting carbs into BODY
FAT to store them.
• Our body looks at Insulin as
a sign to start the STORAGE
process
• This is the ONLY reason that
causes OBESITY
Conclusion:
More INSULIN = More
Obese
8. Carbs also
• Keep providing easy energy to body = Body will never start
burning stored fat
– To burn stored fat, body needs ZERO carb input ELSE it will
always burn only carbs
• Increased insulin is a symbol in digestive system for need
for more energy = Means it causes more hunger -> this is a
cycle, eat more feel more hungry eat eve more
• When someone has Chronically high level of blood sugar,
his body gives up on trying to control it using insulin. These
people need artificial injection of insulin to lower their
blood sugar level. They are called Diabetics. Tt’s a disease
caused by REGULAR consumption of carbs
9. Fine so what do I eat?
• Eat proteins and fats
• First body will burn eaten Carbs,
then stored fats and then eaten
fats.
• We don’t even allow ourselves to
start burning stored fats. We
keep adding to that storage by
eaten carbs
• IF we ever burned Fats:
– Calories in 1gm FAT = 9
– Calories in 1gm of Carb = 4
– Then isn't carb better? See next
10. Mystery of calories
• Reading calories to determine if food makes us
fat or not is like testing speed of a car by running
it under water -> it’s a wrong measure!
• High or low calories don’t matter
• Type of calorie matters
• Two types of calories:
– Those that cause obesity (from carbs)
– Those that do not cause obesity (from fats & proteins)
