What is
Food and
Beverage
Services?
Food and Beverage Services is related to all the activities
pertaining to preparing for service and serving food and
beverages. This introduces you to various types of services,
table settings, various equipment used in service, types of
menus, types of service operations, food garnishes and
accompaniments, and various standard operating procedures
followed by food and beverage service business.
• Food is one of the basic necessities of life. Food contains nutrients—
substances essential for the growth, repair, and maintenance of body
• Food is any substance consumed by an organism for nutritional support.
• Food is usually of plant, animal, or fungal origin, and contains essential
nutrients, such as carbohydrates, fats, proteins, vitamins, or minerals.
• A beverage or drink is a liquid intended for human consumption.
• In addition to their basic function of satisfying thirst, drinks play important
roles in human culture.
• Common types of drinks include plain drinking water, milk, juice,
smoothies and soft drinks.
• A cuisine is a style of cooking characterized by
distinctive ingredients, techniques and dishes, and
usually associated with a specific culture or
geographic region.
• Regional food preparation techniques, customs, and
ingredients combine to enable dishes unique to a
region.

The main aim of F & B operation is to make sure to make the customer
satisfied by understanding their needs and further fulfilling them.
A customer visiting F&B outlet is either looking at fulfilling one or all these
needs.
Physiological - the need to taste different varieties of food.
Economical – the need to get Food and Beverage Services at
the invested cost.
Social – the need to find friendly atmosphere
Psychological – the need to elevate self-esteem
The main goals of Food and Beverage Services:

Types of Food and Beverage Services Operation
Are restaurant serving mostly cooked or ready to eat food
arranged behind a food serving counter. A patron take a tray and
pushes it along track on front of the counter. Depending on the
establishment, servings may be ordered from attendants,
selected as ready-made portions already on plates or self of food
of their own choice.
A restaurant or an eatery is a business that prepares and
serves food and drinks food and drinks to customers. Meals
are generally served and eaten on the premises, but many
restaurants also offer take – out and food and delivery
services.

American cuisine etc.

creating a memorable experienced. Themed restaurants have
unifying or dominant subject or concept, and utilize
architecture, décor, special effects and other techniques,
often to create exotic environments that are normally
associated with dining because they are inaccessible, no
longer exist, fictional or supernatural or taboo.

accommodations on a commercial airplane,
train, passenger ship, or other conveyance.

meant for sit-down meals, whereas
bars are mostly places for drinking and
socializing.
An establishment that primarily serves coffee (of various types
example espresso, latte, cappuccino) some coffee houses may
serve cold drinks such as iced coffee and iced tea. A
coffeehouse may also serve food such as light snacks,
sandwiches, muffins or pastries.
