Foodborne Illness
• Foodborne illness is any illness resulting from the
  consumption of food.
• Foodborne illness is commonly called food poisoning,
even though most cases are caused by a variety of
pathogenic bacteria, viruses, prions or parasites that
contaminate food, rather than chemical or natural toxins.
• Foodborne illness usually arises from improper handling,
preparation, or food storage. Good hygiene practices
before, during, and after food preparation can reduce the
chances of contracting an illness. The action of
monitoring food to ensure that it will not cause foodborne
illness is known as food safety. Foodborne disease can
also be caused by a large variety of toxins that affect the
  environment.
                                                            2
How many people in the United States
get sick each year from food they eat?

• 76 million people
  become sick from
  foodborne illnesses

• 5,000 people die

                        You can get sick
                        from a foodborne
                        illness when you
                        eat unsafe food! 3
How do you know if YOU
have a foodborne illness?

                            4
Some possible signs and symptoms

                       Fever
Upset stomach Diarrhea

                OOPS
                  !
                  Dehydration (sometimes severe)
  Vomiting from losing bodily fluids
                                            5
Sometimes you
can become very
sick and may have
to stay in the
hospital a couple
of weeks or longer!
                      6
You can’t always spot spoiled food by
using these three senses – what are they?

  Sight

            Smell

          Taste
                                      7
Even IF tasting would tell …
    Why risk getting sick?
           Yuk!

              A “tiny taste” may not
              protect you …
               … as few as 10
               bacteria could
               make you sick!
                                  8
How long does it take to get
    sick after eating unsafe food?
Hey guys, I need It can take ½ hour
to throw up! to 6 weeks to become
                       sick from unsafe
                       foods.
                       You usually feel OK
                       right after eating
                       and become sick
                       later.
Foodborne illness is NOT
    a pretty picture! 9
Why risk your friends’ health?

                   I’m feeling sick
                        …was it
                     something I
                   ate? How come
                     no one else
                      feels sick?

             Not everyone who eats
             the same food gets sick.
                                  10
Some people have a higher risk
     of foodborne illness

Infants Young children and
          Pregnant older adults
           women

          People who are already
          weakened by another disease
                                        11
          or treatment for a disease
It’s not fun to have a foodborne illness!

                  You got
                 that right!
                                      12
Be a winner!

Increase your
chances of
preventing
foodborne illness!
