Restaurant Philosophy



 Kanua is the name of a lost variety of
 local rice – lost because of modern
 methods of mass production. So this
 isn’t just a restaurant, it’s a revival!


 The food at Kanua, too, veers away
 from restaurant staples. Here, it's a real
 taste of coastal Karnataka, with
 ingredients sourced from where they
 are grown or produced.
The restaurant, which occupies a terrace, has been put together
with pieces salvaged from old buildings and restored here with a
contemporary sensibility.
The concept of revival has been applied to the architecture also ,
methods of plastering and flooring follow the traditional
practices.
The railings found all
around have been made
using salvaged wood.


                    The entire roof structure
                    has been assembled using
                    only nuts and bolts hence
                    when the need arises can
                    be dismantled in under a
                    week




Including the electrical
switches used blend
with the theme.
                                      Even the nuisance of mosquitoes
                                      has been dealt with traditional

                                     practices, even after incorporating
                                     thirteen different methods they are
                                     still not able to arrest the
                                     problem completely.
The custom built furniture
  designed blends in perfectly
  with the entire environment.

                                  The sound system has been
                                 attention by having custom
                                    built speakers that provide
                                    excellent clarity while being
                                            almost invisible !!




 This has been achieved
 by creating speakers out
 of pvc pipes and a woofer
 out of an old tree trunk !!!

Lighting
• The restaurant minimizes its
  dependence on artificial
  lighting by resorting to it
  only during the night.
• It has been designed in
  such a way that there are no
  walls in the entire dining
  area ,which help in letting in
  ample light during the day.
• The main ridge of the roof
  has got provisions for hot
  air escape
The entire restaurant is transformed at
night with the help of the lighting used.
Minimal use of artificial
 lighting has been
achieved, there is a
total of ten 15 watt bulbs
and ten Cfl lamps for the
 entire dining area .


                                Adding to the
                             ambience of the
                             entire place, are
                              the candles lit on
                              individual tables
The 15 watt bulbs are
encased in a circular
cloths lanterns and
suspended from the roof .




                            The Cfl lamps are
                            encased in bamboo
                            lanterns positioned on
                            the floor.
Conclusion
Stepping away from standard lighting
requirements has helped Kanua stand
out as a unique place to dine .

They have been successful in keeping
to their theme of revival!! in all
aspects
