Peppers grow best in temperatures between 21-33°C during the dry season. Night temperatures should not exceed 30°C for fruit to properly develop. Fields where legumes or cereals were previously grown are best for peppers, to prevent disease and pest buildup from previous solanaceous crops. Peppers self-pollinate but isolation of 20m between varieties or wind breaks are recommended. Healthy, attractive fruits from marked plants should be selected for seed harvesting when fully ripe. Seeds can then be extracted from fresh or sun-dried peppers and stored in airtight containers in a cool, dry place for up to three years.
