Salad Ingredients
• 5 pounds Red potatoes, cut into 1-inch pieces
• 6 ounces Red onion, finely diced
• 6 ounces Green onion, chopped
• 10 ounces Cherry tomatoes, halved
• 21/2 tablespoons Parsley, chopped
Honey Mustard Vinaigrette
• 6 tablespoons Lemon juice
• 21/2 tablespoons Honey
• 21/2 tablespoons Sherry wine vinegar
• 21/2 tablespoons Whole grain mustard
• 6 tablespoons Olive oil
• Salt and pepper, as needed
Prep Time: 20 minutes
Cook Time: 20 minutes
Ready Time: 40 minutes

Preparation
In a medium saucepan, potatoes covered in water; bring to a boil. Continue to cook for 20 minutes or until
fork tender. Drain and cool.
In a small bowl, whisk together lemon juice, honey, vinegar and mustard until well blended. While
whisking, slowly drizzle in oil until completely incorporated. Season with salt and pepper.
In large bowl, mix potatoes, Honey-Mustard Vinaigrette and green and red onions. Just before serving,
mix in tomatoes and parsley.

STORAGE
INFORMATION:
Store potatoes in a dark, dry
and well ventilated area for up to
2 weeks. Warm temperatures may
result in sprouting and shriveling.
MICROWAVE: Scrub potatoes well under cold
running water. Pierce with fork in several places. Place
in microwave-safe dish. Microwave a medium-sized
potato on HIGH 5 to 6 minutes. (For each additional potato,
add 3 minutes cooking time. Arrange potatoes at least 1 inch
apart.) Turn once halfway through cooking. Cook until potato just
begins to feel soft.
STOVE TOP: Scrub potatoes well under cold running water. Quarter the
potatoes. Cover potatoes with water and bring to a boil. Cook for 15-20 minutes,
until fork tender.
