3. Recipe
Farm Fresh Pesto

Fresh Pesto adds a fresh flavor to Pasta, Potatoes, Bread Spreads, Fish, Chicken and much more. It’s easy to
make, lasts for weeks in the fridge and will kick up that drab recipe to a spectacular dish. Also, it’s easy to
substitute ingredients and still have a wonderful Pesto taste.
Ingredients
•2 cups fresh basil leaves or arugula works great too.
•1/2 cup freshly grated Parmesan or Romano cheese
•1/2 cup extra virgin olive oil
•1/3 cup pine nuts or walnuts or pecans
•1-2 medium sized garlic cloves
•Salt and freshly ground black pepper to taste
•Special equipment needed: A food processor or bullet (blender) or blender.
Preparation
1 Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using pecans or
walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the
basil.) Add the garlic, pulse a few times more.
2 Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of
the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of
salt and freshly ground black pepper to taste.
Yield: Makes a little more than 1/2 cup.

4. Assemble all of your ingredients, Basil (or Arugula), Olive Oil, Pecans (or Pine
Nuts or Walnuts), Garlic, Parmesan (or Romano) Cheese, Salt and Pepper

5. Wash the basil and pat dry.
Since I picked the basil fresh I had to remove the leaves from the stem.

6. When All of the stems are removed you should have about 2 cups of leaves.

7. I had a very large bulb of garlic, so I just used one. If you have smaller
cloves, use 2 or 3.

8. Peel the skin from the garlic clove.

9. If you are using walnuts or pecans process the nuts first to a fine consistency.

10. Add the basil to the pecans.
If you are using Pine Nuts then add the Basil and Pine Nuts together and pulse
until blended well.

11. Drizzle the Extra Virgin Olive Oil into the basil and nuts and pulse or blend
well.

12. Add your grated cheese and pulse or blend well.

13. Check the consistency of your pesto and scrape the
sides of the processor, pulse again.
Add a pinch of salt and a little pepper and pulse again.

14. Place Pesto in a container and store in refrigerator . Then when
you are cooking that delicious pasta and garlic shrimp, add the
pesto to the linguini and WOW! That’s what I will do tonight.

15. Enjoy this great recipe on Pasta, Potatoes, Cheese Bread, Pizza or whatever
your heart desires!
