2. WHAT ARE PROTEASES?
Protease enzyme is mixture of Pectin enzyme(pectinases) + proteinases + peptidases.
This is an enzyme that catalyzes proteolysis, breaking down proteins into smaller
polypeptides or single amino acids, and spurring the formation of new protein products.
They do this by cleaving the peptide bonds within proteins by hydrolysis, a reaction
where water breaks bonds.

Most proteases are very specific to what peptide linkages they
can break.

Bacterial- Species of Pseudomonas, clostridium and serratia,
Staphylococcus aureus .
Fungal- Aspergillus Niger, Aspergillus Oryzae
High Yielding strain is selected and inoculated in special
culture media.
