This document provides recipes for garden salad, Greek garden salad, kale pesto pasta, and stir fry. But the most important ‘meze’ for rakı is good conversation; it is as important as the harmony between the rakı and food.

Difficulty level: Medium
Featured ingredients
• Lettuce
• Radishes
• Scallions

Salad dressing
• 2-3 whole green onions
• ! cup olive oil
• 2-3 tablespoons of apple
cider vinegar
• 1 tablespoon of honey
• Pinch of salt

Salad
• Chopped lettuce
• ! cup sliced radishes
• ! cup sliced cucumbers
• ! cup sliced tomatoes
• ! cup shredded carrots
How to Make!
• Combine all salad dressing ingredients in a blender or food
processor
• Blend until smooth and creamy
• Combine all salad ingredients in a medium sized bowl with salad
dressing and enjoy!
Tips and tricks
• Add a tablespoon of sour cream or Greek yogurt for a creamier
dressing!
• Combine salad dressing and salad in a bowl with a lid and shake to
easily mix everything.
• Add fruits such as orange slices and pineapple for a tangy summer
salad!
• Make it your own! Feel free to experiment by adding, leaving out, or
substituting any ingredients according to your preference.

• Lettuce
• Radishes

• Handful of sliced green onion
• Crumbled feta cheese
How to Make!
• Combine all ingredients, add an Italian vinaigrette or your favorite
dressing and enjoy!

• Make your own dressing by combining olive oil, red wine vinegar,
salt and pepper
• Turn it into a meal! Add sliced grilled chicken breast.

• 3 cups chopped kale

Kale Pesto Ingredients
• 2 servings of cooked pasta
• 1 cup chopped Japanese
turnips
• " cup chopped spring
onions
• 1 cup sliced zucchini
• Olive oil
• Pinch of salt and pepper

Tips and Tricks
• Add halved cherry tomatoes to add a fresh taste
• Substitute the pasta for shredded zucchini
o Shred the zucchini to thin strips like spaghetti.
o Add oil, a pinch of salt, and stir zucchini in a skillet over
medium heat until cooked.
• Add half an avocado to the pesto for a creamier sauce
• Make it your own! Feel free to experiment by adding, leaving out, or
substituting any ingredients according to your preference.

How to Make!
• Preheat the oven to 425 degrees F
• Combine all pesto ingredients in food processor
• Blend all together until smooth
• Toss the turnips, onions and zucchini in a bowl with a drizzle of olive
oil, salt and pepper
• Spread all vegetables on a baking sheet and and bake for about
45 minutes or until golden brown; turn them over occasionally.
• Combine vegetables, cooked pasta, and kale pesto and enjoy!

Stir Fry
Difficulty level: Easy

Featured ingredients
• Zucchini
• Kale
• Spring Onions
• Japanese Turnips

Ingredients
• 4-6 kale leaves
• 1 clove of garlic
• 1 cup zucchini roughly chopped
• " cup spring onion sliced
• 1 cup Japanese turnips roughly chopped
• 1 cup green beans
• 2 cups of chicken cubed OR 2 cups of peeled shrimp
• 4 cups of cooked rice
• Sesame seed oil and soy sauce OR teriyaki sauce
• Sesame seeds (Optional)

How to Make!
• Tear the kale leaves apart into pieces and remove the stems
• In a pan or wok, add oil, crushed garlic, and stir the chicken or
shrimp over medium heat until cooked
• Add the kale leaves and sautée until wilted
• Add in the remaining vegetables, soy sauce and sesame seed oil
OR teriyaki sauce and stir for about 5 minutes
• Add the rice and continue to stir until evenly mixed.
• Sprinkle some sesame seeds on top and enjoy!

Tips and Tricks
• Add red pepper flakes for a spicy kick!
• Do not add any salt; the soy sauce/teriyaki sauce will be plenty
salty!
• Make it colorful by adding different color bell peppers
• Make it your own! Feel free to experiment by adding, leaving out, or
substituting any ingredients according to your preference.
