Tequila is a Mexican liquor distilled from the blue agave plant. The production of tequila is strictly regulated by the Mexican government and involves manually harvesting 8-10 year old agave plants, cooking their hearts to extract juice, fermenting the juice with yeast, and then distilling it twice to produce tequila. There are two main types of tequila: mixto which is a blend of at least 51% agave juice and other sugars, and 100% agave which uses only agave juice. Popular brands of tequila include Patron, Jose Cuervo, and Sauza.
