Tequila is a Mexican liquor made from the blue agave plant through a process of harvesting, cooking, crushing, fermenting, and distilling the agave twice - first to an "ordinario" with 20% alcohol then to a blanco tequila with 46% alcohol. For reposado and añejo tequilas, the blanco is then aged in American oak barrels for 60 days to 1 year or more than 1 year, respectively.
