Nata de coco is a jelly-like dessert made from coconut water fermented by Acetobacter xylinum bacteria, which produces cellulose and causes the coconut water to solidify into soft white cubes or sheets. The bacteria ferments the coconut water and produces cellulose, turning the liquid into a jelly-like substance that can be cut into cubes or sheets to make the traditional Filipino dessert known as nata de coco.
