graduate
Have you heard of Outré Manila? A stand out restaurant in the South, which was recently ranked as the
number one ‘go to’ place in the South. With gelatos being churned in an unorthodox method using liquid
nitrogen, along with funky house-made Mod-OZ comfort food to artistic vandalism on its wall, Outré
Manila defines its meaning of being weird, unusual and out of the box thinking.
Neslly Bretaña, a graduate of SISFU with the Degree in Bachelor of Science in Computer Science, wanting
to bring and introduce Modern-Australian cuisine to the Philippines and educate consumers through
food, birth out Outré Manila.
“Outré means weird, unusual. To a point, it means rebellious because it's far-out extraordinary. It's where
you can find gelatos being churned in an unorthodox method using liquid nitrogen along with funky
house-made Mod-OZ comfort food and way too much vandalism(as others would say, but I call it art) on
the walls.” Says Neslly.
“I wanted to bring and introduce Modern-Australian cuisine to the Philippines. Australia was home to me
for almost four years and it is the melting pot of a lot of cuisines; European, American(North and South)

and a
massive
influence of the Asian cuisine mainly because a huge chunk of the population are immigrants from
different countries. I want to educate consumers through food, by using quality ingredients and my
experience as a chef to bring out
a rainbow of flavors. What I would bring out of the pass is something I would eat at home without the
artificial ingredients. The produce is sourced from Tagaytay, we use New Zealand ground beef and fresh
Vannamei Prawns from Gen San. The Philippines has got so much potential when it comes to agriculture
and aquaculture, it's up to the consumers to make it world-class and known.” Adds Neslly.
In inspiring its students, the school aims to give a sense of liberty to explore and see the world in a
different perspective through the experiences they gain in and out of the campus.
“Some lessons you learn in school don't leave you. I've always wondered how some subjects would help
me in the real world and I'm so glad that the Business subjects made a mark on me including Marketing
by Ms. Yay Olmedo. Numbers don't love me but Ms. Caoile was really patient in explaining Basic
Accounting and it definitely helped in running the bloody hardest part of the business, the administrative
side, finance and all the other papers.” Says Neslly, when asked how SISFU helped her in running Outré
Manila.
In what inspires her as a Chef, Neslly encourages her fellow SISFU students and inspiring entrepreneurs to
reach for their dream.
“Never stop wanting to learn new things and get out of your comfort zone. Being a Chef is something I
love, it's amazing to see guests enjoying their food and at the end of the long shift, remembering the
nods of approval and heartfelt thanks I receive. I love the adrenalin rush during a busy service. Don't let
setbacks stop you, I've had a couple of startups that weren't successful before this but it never stopped
me from starting a new one. Also, when running your own business, never forget ethics - most especially
your morals and respect the environment. Environmental sustainability is an important issue in other
countries and I wish that other entrepreneurs would join the movement and educate the people here in
the Philippines about it.”
