2. How to make CATALAN CREAM
INGREDIENTS:
1. 1 liter of milk
2. 6 egg yolks
3. 100 g of sugar
4. A little sugar to
quench
5. 40 grams of
cornstarch.

1-Put the milk, orange and lemon and cinnamon in a saucepan.
Split the vanilla pod lengthways and add this too, then gently

2-Remove from the heat and allow to infuse for 15 minutes.
3- Mix the eggs yolks with the sugar and cornstarch until pale and
creamy
4-Pass the milk drain, then return the milk to the pan and place
over a medium heat.

Elaboration:
Cut the little onion. Peel the 3 potatoes and
cut in littles squares.
Pour everything in the skillet and fry
everything slowly fire for 30 minutes.
Remove everything is on the skillet and drain

POTATO OMELET

7. PREPARATION:
In a saucepan, bring the milk, the cinnamon stick,
lemon rind, and vanilla extract to a boil. Simmer for
several minutes the discard the cinnamon stick and
lemon rind. Set the flavored milk aside.
In a bowl, whisk the egg yolks together with the
cornstarch and 3/4 cup of the sugar until the mixture is
creamy. Gradually pour this mixture into the saucepan
with the milk, mixing continuously.
Slowly heat the mixture until it begins to thicken, taking
care that the mixture does not boil. Pour into four
shallow heatproof serving dishes, allow to cool, and
refrigerate for several hours.
Immediately before serving, preheat the broiler and
scatter the remaining sugar evenly over each serving.
Place the dishes under the broiler until the sugar
topping begins to caramelize. Remove from the broiler
and serve.

In order to have more tender squids:
Place the milk in a bowl, add the squid
rings and let them rest for at least 30
minutes. You can also do the day before,
but always store in the refrigerator.
Drain well.
Pour them into flour and then beaten
egg. Fry them in a frying pan with hot
oil, drain them on a plate covered with
kitchen paper and discard them hot.
Open the bread, place the squid on top
and add the mayonnaise sauce, filling
