This document discusses how soy products have improved health outcomes in developing countries. It summarizes several programs run by HPP/Planet Aid in partnership with other organizations that have promoted soy production, processing, and consumption. Key points include: (1) Nutrition education programs for farmers that increased soy production and crop diversification; (2) "TCE" HIV/AIDS projects that boosted immunity through new diets; (3) Teacher training programs with vegetable gardens and nutrition lessons. (2) In Mozambique, 50 community soy restaurants were established to promote soy consumption and women's businesses, improving nutritional status. Over 1.2 million meals have been served containing soy foods. Children who consumed soy meals daily experienced significant health improvements
