4. 2 x teaspoons of curry powder
2x teaspoons of sesame oil
200g of your favouite rice
2 x cups of bean sprouts
1 x red capsicum, deseeded &
sliced
2 x tablespoons of coriander
leaves (to serve)
1 x sliced onion
1 x lime, wedges (to serve)
1/4 cup soy sauce
2 x eggs, lightly beaten
1/4 cup vegetable oil
250g small cooked prawns, peeled
5. Part 1
Soak rice in cold water for 15
minutes until softened.
Drain well.
Part 2
Heat 1 x tablespoon of the oil in a
wok over medium heat.
Add egg and swirl wok to coat
sides to make a thin omelette.
Cook for 2 minutes or until set.
Transfer omelette to a chopping
board, roll up and cut into thin
slices. Set aside.
6. Part 3
Add 2 x tablespoons of the oil to
the wok and increase heat to
medium- high.
Add onion and capsicum and stir-
fry for 3 minutes.
7. Part 4
Mix curry powder with 1 x
tablespoon of water.
Add noodles and curry mixture
and toss over until combined.
Add prawns and bean sprouts
and stir-fry for 5 minutes.
Add omelette, soy and sesame oil.
Transfer to serving bowls.
Garnish with coriander and serve
with lime wedges.
