2 15-oz cans cannellinibeans,drained
1 clove garlic,minced (optional)
1 tsprosemary,chopped (optional)
½ cup fat free mozzarellacheese
1 small eggplant,dicedorsliced

1-2 bell peppers,dicedorsliced
2 small plumtomatoes,dicedorsliced
Instructions
1. Preheatovento450°.
2. On a plate linedwithpapertowels,sprinkleeggplantchunkswithsalt. Let sitfor 15 minutes,pat
withpapertowels,turnchunksover,andrepeatonthe otherside.
3. Meanwhile,brusholive oil overpitarounds.
4. Mash cannellini beansandif desired,mix withgarlicandrosemary. Spreadmashedbeansand
sprinkle cheeseoverpitarounds.
5. Cookthe eggplantandpepperinafryingpan with1 tbsp olive oil until lightlybrown.
6. Top the pitarounds withall vegetables.
