• Kitchen is a room or part of room used for cooking and food preparation.
• A stove, a sink , a refrigerator and kitchen cabinets arranged here.
• The main function of a kitchen is cooking or preparing food but it may be used
for dining, food storage, entertaining, dishwashing.
• The kitchen is one of the most busiest and most expensive room in the home.
• Creating a good kitchen is lot like creating a good meal.
• Properly planning a new kitchen or remodelling a kitchen is important as
choosing the right material and installing them precisely.

• The height of kitchen platform should be ranging in between 2’9” to
2’11”.
• The depth of platform should be ranging between 2’ to 2’6”.
• The length of platform depends on the kitchen design and room size.
• Maximum height for overhead cabinets is 7’0” and the height for
cabinet from platform should not be less than 2’0”.
• Make sure that nothing obstructs the work triangle.

• Locate the three parts of our kitchen – the refrigerator, sink and cooktop.
• It is an imaginary triangle and we move over these imaginary triangle lines, from center
of our cooktop to refrigerator, refrigerator to sink, and sink to cooktop.
• The kitchen work triangle total should range from 12’-0” to 27’-0”. It means that the
sides should not be less than 4’ and not more than 9’.
• And we should be able to walk in unobstructed lines.
• A large triangle would require too much walking while a smaller one would create a
cramped layout.

16. ACTIVITY CENTERS
• Each center will be organized according to an activity focus, be assigned a designated space and
encompass storage for tools needed for that activities.
• In most kitchens activity centers overlap.
A sink/ cutting center – the zone for peeling, chopping and washing food.
A cook and serve center – the zone of cooking, baking, and utensils storage area.
A refrigerator center – the zone of storing groceries etc.

17. SINK AND CUTTING CENTRE
• We need sink in this area, water and drainage for food preparation and clean up jobs.
• This center's focus: washing, chopping, draining and preparing food.
• Its designated area: the sink and a counter area next to the sink. Storage for this center
can include the counter, sink storage areas, a drawer and cabinet space.
• This is the most used center in the kitchen and should be central to other major centers.
• Other things present here:- dustbin, dishwasher, water heater.
• On sides of sink leave minimum 1’6”, and 9’ to 1’0” .
• In this center we should plan a window.

• This centre is planed around the range or cooktop.
• This work area is to planed for cooking and serving food.
• It is most desirable to store dishes in this area.
• In this centre we should avoid having a window because it takes away storage
space and makes venting or hood installation difficult.
• Counter space on either side of range is desirable, 2’0” is minimum And
1’6”(minimum) to set serving dishes.

21. REFRIGERATOR CENTRE
• the refrigerator is best located so it will not block the movement from one work
centre to another, so it usually located at the end of the work area.
• We should provide at least 9” on latch side so the door opens completely.
• The fridge location should not interfere food transfer between counters and the

• It should be located near the entry of the kitchen where you will bring grocier’s
into home.
