1-Fruits
 In Iran during all four seasons many different kinds of
fruits are produced.
 The fruits are categorized by their kind of germination
and their place of germination. Fleshy fruits, dried
fruits and mixed fruits are the kinds of fruits that are
produced in Iran.

Apple
 The apple is a fruit tree, Rose family (Rosaceae) specie
that grows in cold areas
 Apple has many sorts such as: Gala apple, red delicious,
green apple and crab apple
 At least 58.2% of world total apple production belongs
to ten countries. Among them: China, The United
States, and France. Iran is the sixth apple-producer
country in the world

Orange
 which usually grows to 9–10 meter in height. It is the
most commonly grown tree fruit in the world. Oranges
probably originally came from Southeast Asia: China and
India
 The largest countries of oranges production are Brazil,
The United States, Mexico, china and Spain
 Iran ranks eighth in the list with 109 million tons
production .

Kiwi
 According to the recent published statistics from Food
Organization after Italy, Chile, France, The USA , Iran
goes eighth in the rate of largest kiwi producers
throughout the world
 Mazandaran Province in Iran with production of 107000
tons is the greatest cultivation area of this high
property and delicious fruit. Kiwi grows in a fertile land
in Mazandaran that takes 4,900,000 hectare.

Tangerine
 Tangerine is from a mixed fruits family. It is smaller
than orange, and has a sour and sweet taste.
 Tangerine is produced in northern area of Iran. Gilan,
Golestan and Mazandaran provinces are major centers
of tangerine production. According to the recent
reports of Global Food Organizations Iran ranks fifth
among the greatest tangerine producers of all over the
world.

Olive
 The Olive, Olea European, is a species of a small tree in
the family Oleaceae, native to the coastal areas of the
eastern Mediterranean Basin (the adjoining coastal
areas of southeastern Europe, western Asia and
northern Africa) as well as northern Iran at the south
end of the Caspian Sea. Its fruit, also called the olive, is
of major agricultural importance as the source of olive
oil.
 Olives are one of the most extensively cultivated fruit
crops in the world . In 2009 there were 9.9 million
hectares planted with olive trees, which is more than
twice the amount of land devoted to apples, bananas or
mangoes. Only coconut trees and oil palms took more
space

Pomegranate
 Over 1.5 million tons of pomegranates are produced per year
throughout the world. The homeland of this fruit is Iran;moreover,
this country is the world largest pomegranate-producer with over
50%proportion of world's total harvest
 There are many sorts of pomegranate in Iran
 Khafre Shiraz pomegranate. In fact it is the sweetest and whitest
out of all types of pomegranate. It is in some extent cheaper in
comparison with other sorts. But white pomegranate has especial
features such as Omega-3, Omega-6 and notorious facts. Therefore,
it is more expensive than red seeds in European countries
 Saveh pomegranate. This sort is famous for its three properties
such as sweet flavor, soft skin and long life
 Firuzkooh pomegranate. Thick-skinned round fruit, which has a
reddish center, full of large juicy seeds.

Peach
 The peach tree (the scientific name: Prunuspersica, in
Latin means Persian apple) is a species of Prunus that gives
an edible juicy fruit, with white or yellow flesh and
velvety skin. Its classification depends on whether the flesh
sticks to the stone or not, and therefore there are two
basic types: clingstones and freestones.
 Peach is cultivated almost all over the world.
 There are thousands of peach cultivators in the world: over
1132000 tons of this fruit are produced per year. In the list
of first ten countries China with 3 million tons is the major
peach-producer country. After china Italy goes with 1.4
million tons, The United States - with 1.3 million tons,
Spain - with 90000 tons, Greek - with 600000 tons, France
- 460000 tons, Turkey - 4000000 tons, Chili - 275000 tons,
Iran - 267000 tons and finally Argentina with 254000 tons.

Cherries
 Scientific name is Prunuscerasus, Native area extends
through most of Europe, southwest of Asia and parts of
Caspian Sea and Black sea. The skin color is generally
deep red with a sour flavor. Cherry trees range in height
from 4 to 10 meters.
 Iran, Turkey and The United States are the major
cherry-producer countries in the world.
 The most important sorts of cherry produced in Iran are
Bing and Protiva , which are cultivated in Mashhad
province, where cherry is harvested from the beginning
to the middle of summer time.

Persimmon
 Persimmon evergreen trees are originally native to China
and Japan. It is also very popular and beloved for its taste
in Iran, and has been cultivated here for a long time. There
are hundreds of persimmon sorts in Iran.
 The Date-plum (Diospyros lotus) is native to southwest Asia
and southeast Europe, also cultivated in most forests in
south of Iran. It was known to the ancient Greeks as "the
fruit of the gods", or often referred to as nature's candy.
 Japanese persimmon or kaki (柿) (Diospyroskaki) is the
most widely cultivated species. These are sweet, slightly
tangy fruits with a soft to occasionally fibrous texture. This
species, native to China, is deciduous, with broad, stiff
leaves. Nowadays many types of Japanese persimmon, from
dark reddish to orange, are cultivated in Iran.

Melon
 Melon (lat. Cucumismelo) is aname given to various
members of the plant family Cucurbitaceae with sweet
flavored, fleshy fruit, which is important worldwide
 Iran has 79992 hectares of melon cultivation area. The
total melon harvest is about 1221631 tons throughout
Iran. The major melon-producer provinces are Khorasan
with 636459 tons, Semnan with 119078 tons and
Khozestan with 138709 tons. Khorasan with more than
45553 hectares of cultivated area and 57% of total
harvest is the main melon-producer province
 Iran exports melon to other countries such as
Azerbaijan, Germany, Afghanistan, The United Arabic
Emirates , Austria, Sweden, Iraq, Saudi Arabia and
Kuwait

Cantaloupe
 The cantaloupe derives its name from the ltalian village
of Cantalup, where it was first cultivated around 1700
A.D. It belongs to the same family as the cucumber,
pumpkin and gourd, and like many of its relatives,
grows on the ground on a trailing vine.
 Iran exports cantaloupe to other countries such as
Azerbaijan, Germany, France, Afghanistan, The United
Arabic Emirates , Austria, Sweden, Iraq, Saudi Arabia
and Kuwait.

Watermelon
 Sparing watermelon is cultivated in Mashhad, Iran.
Sabzevar Jovin watermelon is available in markets on
July and Hamadan watermelon in the late summer time.
Dezful, Minab and Bandar Abbas watermelon is
harvested in early winter time
 There are more than 130.000 hectares of watermelon-
cultivated areas in Iran, which produce 2 million tons
per year on average. Therefore, Iran is the third largest
watermelon-producer country in the world after China
and Turkey
 Varieties of watermelon : round striped watermelons
and oval-shaped white watermelons.

Grape
 Grape tree is called "TAK" or "MOU" in Iran, its scientific
name is "Vitis Vinifera". It has strong and long roots, many
branches and naturally does not grows vertically. Grapes
can be with seeds and seedless.
 The most common sorts of grapes in Iran are as follow:
Shahani, Yaghouti, Khalili, Askari, Rishbaba, Angor
Keshmesh, Fakhari, Angor shast arosan siyah, Alghi siyah,
Mesghali, Razeghi, Shirazi, Nabati, Madarbacheh…
 Since Iran can have different seasons in one time on its
different territories, this country can provide over 3 million
tons of grapes per year, so Iran ranks eighth among grape-
producer countries.
 The main provinces that produce grapes are; Takestan,
Qazvin, Hamadan, Ardebil, West & East Azerbaijan,
Orumiyeh and Isfahan.

2-Dried Fruits
 These two words, dried fruits, mean long traditional ways to
preserve fresh fruits. These are the ways in which human have a
chance to preserve nature's jewelry for a longtime. Dried fruits
have a long time history in cookery and have been prized in this
field for its nutritional value available all four seasons. All kinds of
dried fruits can be kept fresh for 12 months in the cool and dry
place.
 Pistachios, raisins, dates, almonds, walnuts,hazelnuts, apricots,
figs, peaches, pears and all other kind of dried fruits are used in
domestic cooking; besides their sweet taste they add to the dishes
some kind of freshness. For instance, the raisins are used with
cereals and yogurt as a nutritious breakfast.
 In Iran the production history of dried fruits, especially pistachios,
dates back to many centuries. That is Iran where we can find the
earliest mention of dried fruits. Moreover, the taste and odor of
Iranian dried fruits have a worldwide reputation.

Pistachio Iranian Pistachio Varieties: Some 90 varieties of pistachio are known in
Iran. A number of them are cultivated extensively and commercially and
some of them are cultivated sporadically. The specifications of the most
important commercial pistachios destined for exportation are as follows:

Pistachio Jumbo Pistachio (Kale ghuchi):Relatively high yield and large kernel are
the contributing factors in its selection and expansion. It has stronger and
stiffer branches compared with "Fandoghi" .It is round and relatively large.

Pistachio Round Pistachio (Fandoghi): It is one of the most important commercial
cultivars of pistachio. It is well-established and adaptable to most regions
in which pistachio is cultivated. It is produced in 60% to 70% of pistachio
orchards of Rafsanjan.

Pistachio Long Pistachio (Akbari): It is one of the commercial types of pistachio and
economically has the highest value. Its kernel is long and large. It can be
harvested in the middle of September.

Pistachio
 Long Pistachio (Ahmad aghaee): It is one of the
commercial and high quality cultivars. It is long and its
shell is white in color. Its kernel skin is red and the
kernel is green.
 Long Pistachio (Badami): The shape of its kernel is
similar to that of the almond. Available in sizes 24-26,
26-28, 28-30
 Natural Pistachio kernel (red and cream color): It is the
kernel of pistachio removed from the shell. Pistachio
kernel is used in bakery, making ice cream and cookery.
 Green kernel Pistachio: This kind is used to add flavor
and/or green coloring to ice cream, cookies and other
cuisine.

Date
 Dates are known as heavily nutritious fruits which are also
rich in several minerals. This natural product contains iron,
potassium, zinc, manganese, vitamins such as A,B and E
which are advantageous for health. Researches about date
show that this fruit is considered to be good in preventing
cancers such as abdominal cancer,colon cancer and others.
According to a study by Al-Shahib and Marshall, in many
ways, "dates may be considered as an almost ideal food,
providing a wide range of essential nutrients and potential
health benefits." Dates are a very good source of dietary
potassium. The sugar content of ripe dates is about 80%;
the remainder consists of protein, fiber, and trace elements
including boron, cobalt, copper, fluorine, magnesium,
manganese, selenium, and zinc

Walnut
 Walnuts are popular for their features as "Brain Food",
not only for their shape that resembles brain, but also
for their richness in Omega-3! We need Omega-3 for
boosting our brain functions.
 After China and the United States, Iran is now the
largest commercial producer of walnuts in the world .
 Tuyserkan is the main walnuts producing region in Iran.
The product of this area has a high quality and is
frequently exported.

 The Commonfig (Ficus carica) is a large, deciduous
shrub or small tree native tosouthwest Asia and the
Mediterranean region (from Afghanistan to Portugal).
TheCommon Fig is widely known for its edible fruit
throughout its natural range inthe Mediterranean and
Middle Eastern region, Iran, Pakistan, northern
India,and also in other areas of the world with a similar
climate
 Figs can beeaten fresh or dried, and used in jam-
making. Most commercial production is indried or
otherwise processed forms, since the ripe fruit does not
transportwell, and once picked does not keep well
 FAO reports that Iran is the second top fig-producer
country.

Almond
 Spain is now the world´s first leading almond producer,
this production plays a key role in this country with
596.000 acres of planted areas, and 40% of total world's
almonds crop. After Spain the major producers are the
USA with 170.000 acres , Tunisia with 168.000 acres and
Morocco with 135.000 acres ranking second, third and
fourth respectively
 Iran is currently sixth largest almond-producer country
with 76935 hectares.

 Khorasan , Fars , EastAzerbaijan , Yazd, Kerman, Isfahan
and Chahar Mahal Bakhtiari with 86.5% of the total
cultivation area are the main almond producers in Iran

Hazelnut
 Iran ranks seventh in the world in producing hazelnut.
 Gilan province is the largest hazelnut producer in Iran.
The total area that farms occupy is about 7200
hectares.
 The province of Qazvin after Gilan is the second largest
producer of hazelnut in the country. There are more
than 1200 hectares of hazelnut fruitful saplings here
which give about 600 kg per hectare.

Raisin Dried grapes known as raisins have been used since many centuries ago.
Raisins were produced in Persia and Egypt as early as 2,000 BC. Raisins are
very nutritious dried fruit and as other dried fruits available during all for
seasons.

 Golden raisin: seedless, have sweet
flavor, a lot of calories and concentrate
high sources of energy.
 Green raisin: naturally green, have
sweet taste and a long life. Produced in
the northeast of Iran, in the region of
Kashmar, thus this sort is also known as
kashmarian raisin .
 Sultan raisin: made from seedless yellow
grape, usually softer and sweeter and
contain more calories than other sorts

Peanut
 The peanut,or groundnut (Arachis hypogaea), is a
species in the legume or "bean"family (Fabaceae). The
flowers are a typical pea flower in shape, 2 to 4 cm
across,yellow with reddish veining. After pollination,
the flower stalk elongates causing it to bend until the
ovary touches the ground. Continued stalk growth then
pushes the ovary underground where the mature fruit
develops into a legume pod, the peanut. Pods are 3 to 7
cm (1.2 to 2.8 in) long, containing 1 to 4 seeds.
 Today, the leading commercial producer which has the
best types of peanuts is in Astaneh Ashrafieh, Gilan
province, its products are known and popular all over
the world.

Saffron
 Saffron is a unique spice that combines a lot of salubrious
features. Regular use of this spice cleanses liver, blood,
makes complexion better, improves mood and makes
healthier whole organism. This is the most expensive spice,
widely used by leading chefs around the world. It's
impossible to overestimate the importance of this spice in
the history of cuisine. Saffron is comparable with the value
of gold, it has name of Red gold or Desert gold, so it has
been cleverly fabricated in all centuries.
 Quality of saffron produced in different countries is very
different. Iranian Saffron is considered to be one of the
best in the world. 81% of the global saffron harvest is
gathered in Iran. Meanwhile, Iranian saffron is the most
affordable.
 Iranian saffron is fully consistent with international
standard ISO 3632,defining quality of saffron. Saffron is
mainly produced in Khorasan Province – Rozavi.

Barberry
 The scientific name of barberry is berberis vulgavis and it is
also called Vurzaj or Vurzak inPersian. It's an evergreen
shrub of deciduous species from 1-5 m tall with thorny
shoots. It has reddish fragile branches, sometimes brow or
yellow. It has egg-shaped leaves scratchy around the edges
and small red fruits in the form of clusters with sourly
flavor.
 It is one of the first shrubs to blossom in spring. Flowering
takes place from late spring to the early summer. The
yellow flowers become bright red before falling in the
autumn.
 Iran is the top barberries-producer country in the world,
the South Khorasan and Qaen provinces are the most
important areas where about 97% of total cultivation and
production of barberries is concentrated .

Apple  The apple is a fruit tree, Rose family (Rosaceae) specie that grows in cold areas  Apple has many sorts such as: Gala apple, red delicious, green apple and crab apple  At least 58.2% of world total apple production belongs to ten countries. Kiwi  According to the recent published statistics from Food Organization after Italy, Chile, France, The USA , Iran goes eighth in the rate of largest kiwi producers throughout the world  Mazandaran Province in Iran with production of 107000 tons is the greatest cultivation area of this high property and delicious fruit.   • 12. Tangerine  Tangerine is from a mixed fruits family. It is smaller than orange, and has a sour and sweet taste.  Tangerine is produced in northern area of Iran. Gilan, Golestan and Mazandaran provinces are major centers of tangerine production. Olive  The Olive, Olea European, is a species of a small tree in the family Oleaceae, native to the coastal areas of the eastern Mediterranean Basin (the adjoining coastal areas of southeastern Europe, western Asia and northern Africa) as well as northern Iran at the south end of the Caspian Sea. Its fruit, also called the olive, is of major agricultural importance as the source of olive oil.  Olives are one of the most extensively cultivated fruit crops in the world . In 2009 there were 9.9 million hectares planted with olive trees, which is more than twice the amount of land devoted to apples, bananas or mangoes. There are hundreds of persimmon sorts in Iran.  The Date-plum (Diospyros lotus) is native to southwest Asia and southeast Europe, also cultivated in most forests in south of Iran. It was known to the ancient Greeks as "the fruit of the gods", or often referred to as nature's candy.  Japanese persimmon or kaki (柿) (Diospyroskaki) is the most widely cultivated species. These are sweet, slightly tangy fruits with a soft to occasionally fibrous texture. This species, native to China, is deciduous, with broad, stiff leaves.   • 30. Grape  Grape tree is called "TAK" or "MOU" in Iran, its scientific name is "Vitis Vinifera". It has strong and long roots, many branches and naturally does not grows vertically. Continued stalk growth then pushes the ovary underground where the mature fruit develops into a legume pod, the peanut.   • 54. Barberry  The scientific name of barberry is berberis vulgavis and it is also called Vurzaj or Vurzak inPersian. It's an evergreen shrub of deciduous species from 1-5 m tall with thorny shoots. It has reddish fragile branches, sometimes brow or yellow. It has egg-shaped leaves scratchy around the edges and small red fruits in the form of clusters with sourly flavor.  It is one of the first shrubs to blossom in spring. Flowering takes place from late spring to the early summer.
