Definition: All steps that the fruits goes through from the time it is harvested to
the time it arrives on consumer’s plate!
Categorization: 3 Categories
• Primary – (Basic)cleaning, grading and packaging
• Secondary – Pulps, pastes, slices
• Tertiary – Jams, juices, pickles
9. Fruit Processing Scenario in India
• While India is the second largest producer of fruits but only around 2% of fruits
production is processed as compared to countries like US(65%)
• The processing industry in India is yet in a nascent phase as people still prefer
fresh product over processed products.
• However, during the last decade due to opening up of Indian markets several
processed products are flooding the market and national statistics show a
robust growth in this sector.
10. NBMS Model
• S – Availability of arable land, water, man power and according climatic
conditions. Transport facilities and man power availability for transport to
nearby markets (Mandi). Very basic cleaning.
• M – Cleaning, packaging and grading
• B – Storage and exports to industries
• N – Creating raw material for products – pulps, pastes, slices and further
processing to final products like packed juices etc.
• C – Finer finishing of the products like packed juices, jams, pickles. Bulk material
for products as well as for materials and chemicals for processing and
preservation of processed products
11. Some problems/constraints
• High incidence of pests and diseases
• Use of chemicals for prevention => Environmental and Health issues
• Heavy post harvest losses and low utilization in processing sector
• Poor storage facilities
• Inadequate supply of quality planting material for improved varieties
