This document summarizes the chemical composition of various coffee by-products and their potential use in developing plastic materials. Coffee processing generates by-products like coffee pulp, mucilage, parchment, husks, silverskin, and spent coffee grounds. These by-products contain polysaccharides, proteins, lipids, lignin, and phenolic compounds. Due to their composition, coffee by-products could be used as polymeric matrices or additives to produce bioplastics and confer properties like antioxidants, antimicrobials, gas barrier, and improved mechanics and biodegradability for food packaging applications.
