El Carmín is a typical party in Pola de Siero, Spain where people drink cider and eat sausage. The party began in 1695 when neighbors Andrés Quintana and María García financed the construction of a chapel dedicated to the Virgin of Carmen, forming a brotherhood under her invocation. They spent 12,000 reais on the chapel, which was blessed on July 17, 1695, the day after the feast of the patron saint, and they proposed holding a festival to celebrate it in 1696.
