and production of all great wines, those that are unique and that move us. Those that find their meaning
and definition within their regional history, cultivated land, accompanying climate and labor.
3. WINE CONCEPT
How do we achieve our goals? our philosophy resides in allowing our vineyards to resemble and imitate nature. We
treat the vineyards we cultivate and care for, as an extension of their larger environment and neighboring woods. We
allow our vineyards to express themselves freely and according to the parameters and limitations placed on them by
the land and climate. We only intervene in this process to direct and add minute but decisive touches. In keeping
with our philosophy, our vinyeards are not fertilized allowing the vintages to express themselves. We work the
vineyards as little as possible, without ploughing the land, to avoid erosion and encouraging the earth´s life with
vegetal Covers.
4. At cellar pardas, we are viticulturists and
enologists, winegrowers and winemakers. We are
involved in all steps of production: working and
cultivating the land to bottling and packaging the final
product. It is because of this closeness and our
relationship to all of the process, that we can commit
to our final objective of creating quality wines. Wines
that above all, characterize us and are a reflection of
our corner of the world.
5. We identify closely with the wild boar, our
emblem, which symbolizes belonging to a place and
identifying with its tradition. We also strive to promote
our own roots as viticulturists and enologists in our
work and creation. Regional grapes are combined
with foreign varieties with the objective of capturing
the essence of our estate and sealing it in a bottle.

• In a world of wine that is with each passing
day more globalised, Sumoll is a rarity.
• As a result of our concern and respect for
our viticultural past and the eagerness to
make distinguished wine, Pardas offers the
first and the only 100% rosé wine produced
with the native variety sumoll, a grape lately
ignored by who think that it´s vulgar and
sharp, it has fallen into decline and it is
going to disappear; this grape can only
express its potential with austere viticulture,
of quality, a low yield and a very careful and
respectful enology.

12. COLLITA ROJA 2009
Sumoll grapes are like farmers.At youth are crude and
productive but when time goes by they take root
deeply.
On the verge of death when they are decrepit, full of
wounds on body and soul is when they can give us
wisdom.
At around seventy years old, they have been dying due
to drought and hailstorms, diseases and pain. And the
piece that remains alive (twisted and brittle)suffers to
join the life.
We have an heritage to enjoy and meanwhile to take
care with respect.
In terms of Torrelavit, Sant Llorenç d'Hortons, Piera and
Llacuna, north of Penedès region ,from five or six half
old vineyards we offer Collita Roja.
These old vineyards , full of life, were planted by our
grandfathers , with the help of animals, and we continue
to cultivate walking.
When Josep Pla( one of ours distinguished catalan
writer) states that "a farmer is a farmer and nothing
more than a farmer." Paraphrasing him , we affirm that it
is a sumoll and nothing more than a sumoll: unique and
inimitable.
