LOCAVORE: KEY LIME PIE

INGREDIENTS:
GRAHAM CRACKER CRUST
1 1/2 cup graham cracker crumbs
1/3 cup plain white sugar
6 tbsp melted butter
KEY LIME PIE FILLING
1 can sweetened condensed milk
4 egg yolks
1/2 cup fresh key lime juice
CRUST: Combine crumbs and sugar into a bowl. Add the melted butter then mix well until it resembles
the texture of wet sand. Pat the mixture into a nine-inch pie pan and then place it in the oven to bake
at 350-degrees for ten minutes.
Let cool before adding your filling.
FILLING: Preheat your oven at 325-degrees. Combine all ingredients for the filling in a bowl until
smooth. Pour into your graham cracker crust and bake for 20-minutes. Let rest until cooled. Before
topping with your whipped cream.
TOPPING: In a large bowl, whip one cup of cold, heavy whipping cream until you can form stiff peaks
with it. Beat in one tablespoon of powdered sugar, but be sure not to over-beat, which is when your
cream becomes bumpy and butter-like.
SERVING: Cut the pie and put a dollop of your fancy cream on top or pipe it. Take a pic for the ‘Gram,
tag us, and enjoy. Refrigerate to store it for the next day. It’ll all be gone in a day or so though.
Ace Cafe Orlando sits on an iconic spot
in the heart of Downtown Orlando. In
the early 1990s, the location housed The
Edge nightclub, an alternative music
venue that featured the likes of Nine Inch
Nails, Beastie Boys, The Ramones, Foo
Fighters and Hole.
Sadly, the Edge owners succumbed to
the pressures of the country western
trend and the venue transitioned into a
short-lived 8 Seconds. For those of us
who spent our formative years in the
Downtown Orlando alt-music after hours
clubs scene, visiting 100 W. Livingston
Street triggers a rush of nostalgia.
Today, Ace Cafe Orlando is a thriving
venue that serves as a pit stop for
motorcycle and car enthusiasts and
upholds the tradition of great live music.
Complementing the motoring and rock ‘n
roll, Ace boasts a full-service restaurant
and bar. Led by Chef David Jordan, the
team serves up a menu of “loud food”
and hearty fare—with a few nods to their
London roots.
One dish that is dear to Chef David’s heart
is his surprisingly light and refreshing key
lime pie. This dessert is a family recipe
that was passed down by his grandmother
and he’s been making the pie for over 40
years. Lucky for us, he has generously
offered to share his secret family recipe
exclusively with Bungalower readers.

When Jerry woke from his dream, he had an overpowering wish
for the dream to be true. In it, he had been a Santa of sorts, except
he didn’t have that red outfit and he wasn’t chubby like a bowl full
of jelly, but he did have a bag. Instead of leaving presents, he took
things. He roamed Orlando’s streets, walked into houses and took
from sleeping people. He took their anger, their selfishness, their
pain, their fear and he put them in his bag which was in fact his
heart. Jerry woke abruptly, because he was turning into light.

LOCAVORE: KEY LIME PIE RECIPE COURTESY OF ACE CAFE By Orlando’s locavore, Misty Heath As photographed by Kimberly Jefcoat INGREDIENTS: GRAHAM CRACKER CRUST 1 1/2 cup graham cracker crumbs 1/3 cup plain white sugar 6 tbsp melted butter KEY LIME PIE FILLING 1 can sweetened condensed milk 4 egg yolks 1/2 cup fresh key lime juice CRUST: Combine crumbs and sugar into a bowl. Add the melted butter then mix well until it resembles the texture of wet sand. Pat the mixture into a nine-inch pie pan and then place it in the oven to bake at 350-degrees for ten minutes. Let cool before adding your filling. FILLING: Preheat your oven at 325-degrees. Combine all ingredients for the filling in a bowl until smooth. Pour into your graham cracker crust and bake for 20-minutes. Let rest until cooled. Before topping with your whipped cream. TOPPING: In a large bowl, whip one cup of cold, heavy whipping cream until you can form stiff peaks with it. Beat in one tablespoon of powdered sugar, but be sure not to over-beat, which is when your cream becomes bumpy and butter-like. SERVING: Cut the pie and put a dollop of your fancy cream on top or pipe it. Take a pic for the ‘Gram, tag us, and enjoy. Refrigerate to store it for the next day. It’ll all be gone in a day or so though. Ace Cafe Orlando sits on an iconic spot in the heart of Downtown Orlando. In the early 1990s, the location housed The Edge nightclub, an alternative music venue that featured the likes of Nine Inch Nails, Beastie Boys, The Ramones, Foo Fighters and Hole. Sadly, the Edge owners succumbed to the pressures of the country western trend and the venue transitioned into a short-lived 8 Seconds. For those of us who spent our formative years in the Downtown Orlando alt-music after hours clubs scene, visiting 100 W. Livingston Street triggers a rush of nostalgia. Today, Ace Cafe Orlando is a thriving venue that serves as a pit stop for motorcycle and car enthusiasts and upholds the tradition of great live music. Complementing the motoring and rock ‘n roll, Ace boasts a full-service restaurant and bar. Led by Chef David Jordan, the team serves up a menu of “loud food” and hearty fare—with a few nods to their London roots. One dish that is dear to Chef David’s heart is his surprisingly light and refreshing key lime pie. This dessert is a family recipe that was passed down by his grandmother and he’s been making the pie for over 40 years. Lucky for us, he has generously offered to share his secret family recipe exclusively with Bungalower readers.
