Shopska salad is a traditional Bulgarian cold salad made of tomatoes, cucumbers, onion, roasted peppers, and sirene or feta cheese. It originated among frugal people in Sofia called "shopi" and features the main ingredients chopped and mixed together, topped with grated cheese. The salad is prepared by chopping tomatoes, cucumbers, peppers, and finely chopping onion and parsley, mixing them with olive oil and red wine vinegar before adding the grated Bulgarian or feta cheese.
