Roasted pineapple with the vanilla bean, flamed with the old rum
(Ananasrôti à la gousse de vanille, flambé au vieuxrhum)
Ingredients:
1 pineapple of 400 G
2 vanilla beans
80 G of sugar
20 G of unsalted butter
5 Cl of old rum (scented with amber) juice of 2 oranges
4 quenelles of ice vanilla
4 mint
sheets 4 bunches of currants
Preparation:
