6 aubergines

1 onion

Celery
(200g)
Olives(250g) and
olive oil (1 spoon)
Capers (50g)

Tomato sauce

wine vinegar
(3 spoons)
Sugar
(70g)

8. Preparation
• Cut the celery ribs in
bite-size pieces .
• Blanch them in lightly
salted water for five
minutes.

9. Preparation
• Cut the aubergines in
chunks .
• Fry the diced
aubergines in hot oil.

10. Preparation
• Sear finely chopped
onions.
• Add tomato sauce and
cook for a few minutes.
• Add celery and stir gently.

11. Preparation
• Add the fried aubergines
• Add the olives
• Add the capers
•Dizzle with sugar
and vinegar .
•Season with salt
and pepper

12. Serve it cool with fresh basil. Enjoy it!
