• For more than a decade, innovative restaurateur Billy Blatty has been involved in
the concept creation, menu development, and branding of some of New
Orleans’ most popular eateries. As an avid food lover, Billy Blatty cites New
Orleans’ traditional dishes as his favorite cuisine.
New Orleans is home to one of the most distinctive traditional cuisines in the
United States. Its most popular dishes are heavily influenced by its geography
and Cajun and Creole culture. New Orleans food includes:
- Po’boy: French bread sandwiches that come in several varieties, including
roast beef, seafood, and fried chicken. They may be served with gravy, hot
sauce, or creole mustard.
- Bananas Foster: A dessert created in the 1950s by a New Orleans chef who
was challenged to make a sweet dish out of the bananas shipped into the city
from South America. In addition to bananas, the dish contains butter, cinnamon,
sugar, and rum that is spectacularly burned off during the cooking process.
- Dirty rice: A rice dish that contains long-grained white rice turned brown from
seasoning. Pieces of chicken, beef, or pork, and chopped vegetables such as bell
peppers and onions are also in the dish.
