 Microbial culture medium preparation
 Sampling of water, raw materials, work in progress products and final products
 Testing of water, raw materials, final products and processing using equipments and method such as the
filtration method and conventional method
 Performing microbiological test in the laboratory
 Analysing data and interpret results
 Identification of problematic microorganisms
 Re-test deviating products from specification
 Consumer complaints product testing
 Isolate and reject non-conforming products
 Raise non-conformance on out of specification product.
 Investigating source of contamination for any out of specification
 Microbial testing on process equipment after Cleaning In Place (CIP)
 Ensuring adherence of beverages to specifications

DUTIES
 Factory inspection: glass/plastic check list, foreign object checklist and GMP checklist
 Monitor ozone readings
 Count and log micro plates
 Collect raw materials sample
 Collect aseptic samples when product is to be used in production
 Organoleptic testing of raw materials
 Releasing of raw materials
 Organoleptic test on retention sample
 Take swabs of factory, mixing and de-bagging area
 Check hand swabs weekly
 Calibrate and monitor lab equipment, e.g. scales, incubators,fridges, brix meter and autoclave
 Calibrate and monitor production equipment, e.g. scales and fridges
 Mixing and on-line sample testing
 Brix
 Acid

 Incoming label checks

 Prepare solutions and micro media
